Lavate ben bene i frutti di bosco e asciugarli. Tagliate le fragole in quarti e nel frattempo fate scaldare l’acqua, e aggiungete l’agar agar mescolato con lo zucchero. Portate ad ebollizione e fate cuocere per 2 minuti. Levate dal fuoco e unite le bustine di carcadè per 5 minuti. Levate le bustine, strizzatele e fatele intiepidire.
Sistemate i frutti all’interno di stampini monoporzione facendo attenzione a colare la gelatina quando è tiepida, ma non solidificata. Fate rapprendere a temperatura ambiente, e lasciate in frigo per qualche ora. A questo punto, lavate le fragole per la salsa, frullate con lo zucchero e il succo di limone. Una volta che gli aspic sono pronti, rovesciateli nei piatti, aggiungete la salsa e decorate con la menta.
