L’agar agar si ottiene a partire da alghe rosse che vengono essiccate, lavate e bollite al fine di estrarne le sostanze gelatinose (mucillagini), ovvero fibre idrosolubili, da utilizzare come gelificante in cucina sia per le preparazioni dolci sia per quelle salate: bastano 1 -2 g di polvere di agar agar per gelificare mezzo litro di liquido. Facile da utilizzare, questo prodotto non fa grumi e si adatta a tutti i sapori (senza modificarli!).
La tecnica di impiego è semplice: basta incorporare la polvere al liquido, farlo bollire per un minuto, distribuire il composto in stampi, formine o coppette, e lasciarlo solidificare in luogo fresco. La cucina occidentale ama utilizzarlo soprattutto per dolci light, come budini, gelatine, gelati, e aspic di verdure. Ricco di iodio, potassio, magnesio, fosforo e calcio, agar agar stimola la diuresi e il metabolismo.
Inoltre, le fibre idrosolubili che contiene lo rendono un efficace rimedio antistitichezza e disinfiammante per le mucose, quindi utile anche in caso di colite. Anche l’azione saziante e disintossicante deriva dal contenuto di mucillagini. Quando desideri perdere peso e stai seguendo un regime alimentare ipocalorico, ma sai che il tuo problema è il desiderio di cibo.
Come già detto, l’agar agar ha un effetto saziante e puoi assumerlo attraverso preparazioni dolci o salate buone e nutrienti che non ti danno la sensazione d’essere a dieta. Per ottenere i migliori risultati, devi bere abbondantemente: l’acqua ne aumenta l’azione saziante e regolatrice dell’intestino. Come assumerlo? Attraverso il cibo, perché questo è il modo più gradevole, oppure ponendolo direttamente in acqua, come indicato precedentemente. Vi consigliamo di prenderlo ogni giorno per almeno un mese, soprattutto mattina e sera, fino a 2 g al dì, seguendo le indicazioni date in queste pagine.
