Gli italiani bocciati a tavola. Non è la prima volta e gli ultimi dati dell’Osservatorio Nutrizionali non hanno dato segno di miglioramento. Nonostante tutte le recenti iniziative di sensibilizzazione per migliorare la salute, tenere sotto controllo l’ipertensione e i rischi dell’obesità, la tavola tricolore scarseggia in verdure e ferro. Mediamente, infatti, non si arriva a 200 grammi al giorno, quantità molte basse e molto lontane da quelle consigliate per una sana alimentazione. Si mangiano pochi agrumi, meno di 50 grammi al giorno, spesso dimenticando che limoni e arance sono ricchi di vitamina C, la quale ha un’azione antinfiammatoria, aumenta le difese immunitarie dell’organismo e lo protegge dalle infezioni provocate da virus e batteri.
Ma non è tutto. La vitamina c favorisce l’assorbimento del ferro, soprattutto quello contenuto nella verdura, che altrimenti non sarebbe disponibile per essere assimilato. Bene invece l’assunzione di zinco, che rientra nei valori stabiliti. C’è da dire che è difficile che ci siano delle carenze in tal senso, perché è contenuto negli alimenti di origine animale, più ricchi in proteine. Comunque lo potete assumere anche mangiando cereali integrali, legumi e prodotti a base di crusca.
Scarso è invece l’apporto quotidiano di ferro, importante per le difese immunitarie perché la produzione di anticorpi è legata ad una sua adeguata assunzione. Il dato risulta basso soprattutto nelle donne, che ne assumono in media solo 10,5 milligrammi, ma anche negli uomini si attesta intorno ai 13 milligrammi, ben al di sotto del fabbisogno giornaliero (15-18 mg). Michela Barichella, presidente dell’Associazione italiana di Dietetica (ADI) Lombardia e responsabile medico del Servizio dietetico ICP di Milano, ha commentato:
Non va inoltre dimenticato che Ferro e Zinco rimangono due minerali fondamentali per l’organismo e per il buon funzionamento delle difese immunitarie. Bastano piccole quantità di vitamina C (60 milligrammi al giorno) per aumentare le proprie difese immunitarie. Il fabbisogno di vitamina C aumenta a 90-100 in gravidanza e durante l’allattamento.
