Diabete, il caffè rallenta l’assorbimento del glucosio

Per gli italiani il caffè è un piacere cui non si può rinunciare: corto, lungo, macchiato, dec. Ovviamente bisogna berlo con moderazione, perché se da un lato ha un effetto drenante, quindi migliora la circolazione e aiuta a sconfiggere la cellulite, dall’altro la caffeina è un eccitante e influisce sul cuore. Ma c’è molto di più. Secondo un recente studio dell’INRAN (Istituto nazionale per la ricerca in materia di alimenti e nutrizione), il caffè è in grado di inibire uno degli enzimi intestinali deputati alla digestione dei carboidrati.

Questo potrebbe essere un punto a suo favore, perché in questo modo si determina un rallentamento nell’assorbimento del glucosio, attenuando così il picco glicemico che si osserva dopo il consumo di un pasto, contribuendo alla riduzione del rischio di diabete di tipo 2.  Insomma, in caffè per sconfiggere il diabete.

Per giungere a questa tesi, i ricercatori hanno usato due approcci differenti: uno bioinformatico e uno in vitro. Con le tecniche di simulazione al computer (ossia di bio-informatica) è stata valutata la capacità dei composti fenolici presenti nel caffè di legare e di inibire,gli enzimi coinvolti nel metabolismo dei carboidrati.  Successivamente sono stati fatte ricerche in vitro, che hanno permesso di confermare la tesi.  Fausta Natella, la ricercatrice INRAN, responsabile del progetto di ricerca, ha spiegato:

Nonostante numerose evidenze scientifiche dimostrino che un consumo abituale e moderato di caffè sia associato ad una riduzione del rischio di contrarre il diabete di tipo 2 non è noto con quale meccanismo il caffè possa agire. Noi abbiamo ipotizzato che il caffè interferisca con il processo di digestione dei carboidrati.

Se così fosse (ci vogliono degli altri esperimenti, ma già quelli fatti hanno fornito ottimi dati di verifica), il consiglio sarà quello di bere caffè subito dopo i pasti senza però superare le 4 o 5 tazzine al giorno.
