Questa variante della torta di grano saraceno, un classico della cucina Alto-Atesina, è ideale per i celiaci e per gli intolleranti al grano, poiché naturalmente priva di glutine, ma è indicata anche per chi sta seguendo una dieta dimagrante. 1 porzione, infatti, apporta 293 kcalorie.

La torta di grano saraceno ha buon potere saziante, poiché il grano è composto in larga parte da acqua e fibre alimentari. Inoltre, ha una discreta presenza di minerali, come fosforo, potassio, magnesio zinco, manganese e ferro. Nel grano saraceno, sono presenti importanti vitamine del complesso B, come la vitamina B1, B2, B3, B5 e B6, ed è presente anche la vitamina E, preziosa contro l’invecchiamento dei tessuti.

Il grano saraceno, è indicato nella dieta delle persone che soffrono di celiachia, non contiene, infatti, glutine e con la sua farina si possono preparare dolci squisiti, ma anche pasta, pane, e polenta. Inoltre, ha un alto valore proteico, molto simile a quello della carne e della soia. Inoltre, permette di conservare l’elasticità dei tessuti dei vasi sanguigni grazie alla presenza della rutina.

Da uno studio condotto di recente in Canada, sembrerebbe che il grano saraceno contenga anche un principio attivo, il chiroinositolo, che potrebbe avere un ruolo fondamentale nella cura del diabete mellito.

Ingredienti per 8-10 persone

  • 200 g di farina di grano saraceno; 150 g di burro;
  • 70 g di fecola di patate;
  • 1 bustina di lievito;
  • 2 tuorli d’uovo e 3 albumi;
  • 1 bustina di vanillina;
  • 80 g di fruttosio

Preparazione

Lavorate a crema il burro con 40 g di fruttosio. Mescolate la farina di grano saraceno con la fecola, la vanillina, il lievito e setacciate con il mix. Unite un tuorlo alla vota alla crema di burro e lavorate a lungo.

Amalgamate il mix alla crema. Montate a neve gli albumi, aggiungete poco alla volta il fruttosio rimasto e unite al composto. Lasciate cuocere in uno stampo imburrato a 180°C per 45 minuti.
