E’ proprio in questi termini che Vanessa Gho, studentessa del Master all’Università di Scienze Gastronomiche, ha affrontato la sua tesi “The Pierre Dukan phenomenon: analysis of sociological aspects, health threats and environmental issues of the last blockbuster diet”.
Il regime di Dukan è proteico e punta su un consumo minimo di frutta e verdura. Secondo l’esperta, una dieta iperproteica stravolge i principi della piramide alimentare e non ha solo un impatto negativo sulla salute (qui le proteine sono tre volte quelle consigliate dai nutrizionisti), ma anche sull’industria, soprattutto sull’allevamento di animali. Per ottenere un chilo di carne vengono rilasciati nell’ambiente 26 chilogrammi di CO2 contro gli 0,67 per la stessa quantità di verdure di stagione. Ma non è tutto. Si consumano più di 15 mila litri d’acqua, contro i 240 per la verdura.
Sostenere che la Dukan sia nociva per l’ambiente è troppo. In realtà lo è la dieta occidentale in generale, decisamente sbilanciata a favore delle proteine. È necessario quindi ripensare al nostro stile di vita e soprattutto alla nostra alimentazione. I principi nutrizionali ci sono, così come gli strumenti per metterli in atto. E allora come mai c’è ancora così tanta obesità e i consumi sono sempre gli stessi?
