Ricette light: la crema di carciofi

Durante il periodo delle feste, un po’ tutti, volenti o nolenti, trasgrediamo sulla nostra abituale alimentazione e, anche chi non ha problemi di linea o di salute, necessita di un periodo di disintossicazione dagli eccessi alimentari del periodo festivo. Non è necessario una dieta da fame, basta infatti assumere le giuste proporzioni di valori nutrizionali e ridurre grassi, intingoli e piatti troppo elaborati.

Gli eccessi alimentari delle feste, oltre ai chili di troppo, possono appesantire anche il lavoro degli organi digestivi, ecco perché, nel periodo post feste è bene puntare su frutta e verdura, meglio se di stagione. Per questo, oggi, vi illustreremo la ricetta della crema di carciofi, un piatto leggero perfetto per disintossicare l’organismo e per aiutare i processi digestivi.

Il carciofo, infatti, è un ortaggio dalle ottime proprietà toniche e digestive, stimola la diuresi, aiuta il fegato a funzionare bene e contiene una sostanza, la cinarina, utile per abbassare i livelli di colesterolo; la cinarina, inoltre, è la sostanza che conferisce ai carciofi il loro caratteristico sapore amaro. Inoltre, i carciofi contengono importanti quantità di sali minerali e di oligoelementi, in particolare ferro e potassio.

Crema di carciofi

Ingredienti per quattro persone

Un kg. di carciofi, 300 g. di finocchi, due patate, una cipolla. 1,2 litri di brodo vegetale, un limone, prezzemolo, 20 ml di olio d’oliva, sale e pepe.

Preparazione

Pulite i carciofi eliminando le foglie più dure, divideteli in quattro spicchi e togliete il fieno all’interno, sciacquateli e metteteli a bagno in emulsione di succo di limone; sbucciate cipolle e patate, lavatele e tagliatele a pezzetti, pulite i finocchi e tagliateli a tocchetti.

Versate tutte le verdure in una pentola e copritele di brodo; regolate di sale e pepe, portate ad ebollizione, dopodiché abbassate il fuoco e cuocete per 30 minuti, mescolando. Tenendo da parte alcuni quarti di carciofo, e passate il resto delle verdure al passaverdura o al frullatore e ricavate una crema che vertere in una zuppiera e alla quale aggiungerete i pezzetti di carciofo tenuti da parte, il prezzemolo e un filo di olio crudo. Servite la crema di carciofi ben calda.
