I piselli sia che siano freschi, secchi o surgelati rappresentano senza dubbio un alimento dalle formidabili qualità nutrizionali. Prima di esaminare le proprietà dei piselli diamo un’occhiata ai valori nutrizionali contenuti in 100 grammi di prodotto.

Per ogni 100 grammi di prodotto, le calorie dei piselli sono pari a 77, cosa che li rende un forte serbatoio energetico per l’organismo. La quantità di acqua, contenuta nei piselli, è pari a 76 grammi/100 grammi, mentre le proteine sono 7 grammi/100 grammi. Infine, i piselli sono molto ricchi di fibre, presenti in grammi 5-6.

La presenza di fibre in particolare, contenute prevalentemente nella pellicola che riveste il pisello, svolge un’importante funzione stimolante dell’intestino, il che li rende alimenti particolarmente indicati per coloro i quali soffrono di stipsi o di intestino pigro.

Oltre alla presenza di fibre, il pisello contiene una buona quantità di sali minerali e oligoelementi, oltre 90 mg per 100 grammi. Potassio, fosforo, magnesio, calcio e in misura minore anche il ferro, rendono questo alimento estremamente indicato per il benessere e la salute del corpo.

Attenzione però alla forma sotto la quale questo delizioso alimento viene consumato: infatti, se mettiamo a confronto le tipologie di piselli in base alle calorie apportate vedremo che:

  • I piselli surgelati apportano 48 calorie/100 grammi;
  • I piselli in scatola scolati apportano 55 calorie/100 grammi;
  • I piselli freschi crudi apportano 70 calorie/100 grammi;
  • I piselli secchi apportano 285 calorie/100 grammi.

Come è possibile notare, la differenza, in termini di calorie, tra piselli freschi e piselli secchi è molto alta. Il maggior numero di calorie apportato dai piselli secchi rispetto quelli freschi è dovuto alla disidratazione, ovvero alla perdita delle quantità di acqua che si verifica in seguito al processo di essiccazione.

Più in generale, tutti i legumi secchi,  non solo i piselli, hanno un numero di calorie maggiore rispetto all’alimento fresco, dunque, se state seguendo una dieta per perdere peso, è preferibile il consumo di legumi freschi o surgelati.
