Olio extravergine di oliva: calorie e proprietà

Nel mercato sono presenti numerosissimi oli da utilizzare in cucina ma l’olio extravergine di oliva è da sempre considerato il re degli oli utilizzati in cucina. Unico olio di natura vegetale senza alcuna manipolazione e senza l’aggiunta di elementi chimici, ottenuto con la sola pressione delle olive il risultato, è un prodotto assolutamente sano per il corpo. L’olio di oliva è ottenuto con la sola spremitura meccanica e a basse temperature.

Esistono due tipologie di olio di oliva aventi caratteristiche diverse di acidità (ricordiamo che le denominazioni commerciali degli oli sono regolamentare dall’Unione Europea): Olio extravergine di oliva e Olio Vergine di Oliva. Il primo, a differenza del secondo, possiede un contenuto di acidità inferiore, solo lo 0.8% rispetto al 2% dell’olio vergine di oliva. Diversi fattori naturali determinano differenze notevoli tra i diversi tipi di oli extravergine di oliva, infatti, possiamo avere oli che variano in base alla dolcezza, alla delicatezza, ecc.

Nonostante le calorie dell’olio di oliva (per 100 grammi l’apporto calorico è di circa 900 calorie) esso è tra gli alimenti maggiormente consigliati per il mantenimento di una buona salute di tutto l’organismo. L’olio extravergine di oliva contiene un’alta percentuale di grassi (per 100 grammi abbiamo 98,5 grammi di grassi) suddivisi nel seguente modo: 

  • grassi saturi 15,6 grammi (acido palmitico, acido stearico);
  • grassi insaturi 73,4 grammi (acido oleico, acido linoleico, acido linolenico);
  • grassi polinsaturi 9,5 grammi (questi grassi, non sintetizzati dall’organismo, possono essere forniti solo dagli alimenti).

L’olio di oliva, inoltre, contiene sostanze fondamentali quali vitamine E, A, K, D che, com’è noto, possiedono importanti proprietà antiossidanti e proteggono le cellule del nostro corpo. Risulta infatti un dato certo che l’olio extravergine di oliva, se assunto nei modi e nelle quantità corrette, dona al corpo grandi benefici quali: abbassamento dei livelli di colesterolo cattivo, un aumento di colesterolo buono, prevenzione di patologie a carico del sistema cardiovascolare, prevenzione di aterosclerosi, combatte la sindrome metabolica, previene l’osteoporosi, ecc.
