Umberto Veronesi, come anche Margherita Hack e Dacia Maraini sono la dimostrazione pratica che l’alimentazione vegetariana non soltanto fa bene alla salute, ma allunga anche la vita. Tutti, infatti, sono ancora in piena attività: lavorano anche più di 10 ore al giorno e praticano sport. In una delle sue ultime interviste, Umberto Veronesi ha approfondito la dieta Okinawa, che prende il nome dall’isola omonima a sud del Giappone, dove si trova il numero di centenari più alto del mondo.
La dieta Okinawa, ribattezzata la dieta della longevitità, si fonda su un apporto calorico limitato (1800 kcal giornaliere) e sul consumo abbondante di verdure, cereali integrali, frutta, e spezie, in primis la curcuma, il cuo effetto antiossidante è stato ormai ampiamente dimostrato.
Gli abitanti dell’isola, infatti, consumano da 7 a 13 porzioni al giorno, cavoli, carote e germogli di soia sono quelle maggiormente impiegate, mentre la frutta viene consumata in quantità di 2-4 porizioni giornaliere. Anche il pesce e la soia sono onnipresenti, così come tutti giorni si consumano riso, spezie e té, in modo particolare quello verde, un potente antitumorale.
Il segreto della dieta Okinawa, infatti, è proprio nella ricchezza di antiossidanti, di acidi grassi omega 3, nell’uso delle alghe e delle spezie per insaporire i piatti, piuttosto che il sale o condimenti troppo elaborati, e l’assenza quasi totale della carne, che limita molto l’ossidazione cellulare, responsabile dell’invecchiamento precoce. Tutto questo, naturalmente, si traduce non soltanto in una vita più lunga ma anche migliore, e con un’incidenza bassissima di malattie.
Veronesi, da sempre vegetariano, sostiene la non necessità di alimentarsi di carne, il cui consumo rappresenta un enorme spreco. Come ha fatto notare il professore, se 820 persone soffrono la fame è anche perché la maggior parte del terreno coltivabile viene sfruttato per il foraggio, mentre i prodotti agricoli, se non venissero impiegati soprattutto per alimentare gli animali da allevamento potrebbero bastare a sfamare tutti.
