Lo speck è un alimento ricco di proteine, si conserva facilmente ed è ottimo sia da solo, che come ingrediente di numerose ricette. Ha un moderato apporto calorico, ma un buon contenuto di vitamina B e Sali minerali quali potassio, ferro e zinco. Vediamo insieme delle ricette con lo speck per antipasti e primi piatti rigorosamente light!

Speck, ricette light

Risotto allo speck e zucchine

Ingredienti

(dosi per 4 persone)

  • 280 g di riso integrale
  • 100 g di speck
  • 2 zucchine
  • 1 scalogno
  • Olio extravergine q.b.
  • 1,5 l di brodo vegetale (già salato)
  • Pepe q.b.
  • Parmigiano q.b.

Preparazione

  1. In una casseruola fate rosolare lo scalogno e lo speck tritati finemente con un filo d’olio.
  2. Aggiungete il riso e fatelo leggermente tostare.
  3. Aggiungete il brodo bollente poco alla volta fate cuocere per il tempo indicato sulla confezione.
  4. A 15 minuti dalla cottura aggiungete le zucchine tagliate a cubetti.
  5. Ricordate di aggiungere un po’ di brodo alla volta e di scolare spesso con un cucchiaio di legno.
  6. Togliete dal fuoco, aggiungete una spolverata di pepe e di parmigiano e mantecate. Servite ben caldo.

Pennette di farro allo speck e noci

Ingredienti

(dosi per 4 persone)

  • 280 g di pennette di farro
  • 12 noci
  • 1 scalogno
  • 100 g di speck affettato sottile
  • 4 cucchiai di vino bianco
  • Olio extravergine d’oliva q.b.
  • Latte parz. scremato (o di soia non zuccherato) q.b.
  • Farina q.b.
  • Pepe q.b.

Preparazione

  1. In una padella fate rosolare lo scalogno tritato finemente con un filo d’olio. Unite qualche cucchiaio di acqua a fate andare ancora per qualche minuto.
  2. Aggiungete lo speck tagliato a listarelle e una manciata di pepe. Bagnate con un po’ di vino alla volte a fate evaporare.
  3. Aggiungete le noci tritate grossolanamente e unite un po’ di latte in cui avrete sciolto 1 cucchiaio scarso di farina. Mescolate e aggiungete anche le noci.
  4. Saltate la pasta a fiamma viva per qualche minuto e servite.

Verza stufata con lo speck

Ingredienti

  • 1 verza
  • 1 scalogno
  • 1 fetta di speck
  • Olio extravergine d’oliva q.b.
  • 4 cucchiai di vino bianco
  • Sale e pepe q.b.

Preparazione

  1. Dividete la verza in quarti, eliminando le foglie esterne e il torsolo.
  2. Fate rosolare lo speck tagliato a listarelle con un filo d’olio per qualche minuto. Unite lo scalogno tritato finemente, il vino e fate cuocere per 2-3 minuti.
  3. Lavate la verza e trasferitela nella padella. Coprite e lasciate cuocere per 10-15 minuti, mescolando di tanto in tanto. Se serve aggiungete un po’ d’acqua.
  4. Infine condite un pizzico di sale e pepe e fate cuocere ancora per qualche minuto prima di servire.

Involtini di fagiolini e speck

Ingredienti

(dosi per 4 persone)

  • 300 g di fagiolini
  • 12 fette di speck circa
  • Sottilette o mozzarella affumicata q.b.
  • Olio extravergine di oliva

Preparazione

  1. Pulite i fagioli e lessateli in abbondante acqua calda salata.
  2. Scolate, scioccarli con acqua fredda e fateli scolare.
  3. Formate dei mazzetti e avvolgeteli con lo speck.
  4. Su ogni mazzetto adagiate un quadratino di sottiletta o un cubetto di mozzarella affumicata. Poi fissate il tutto con uno stuzzicadenti.
  5. Disponeteli in una pirofila da forno e irrorate con un filo d’olio.
  6. Infornate a 200°C per 15 minuti circa, fino a quando lo speck non diventa croccante. Servite ben caldi.

Involtini di speck e patate

Ingredienti

(dosi per 4 persone)

  • 400 g di patate a pasta gialla
  • 8 fette di speck
  • Mozzarella secca q.b.
  • 2 cucchiai di parmigiano
  • Noce moscata q.b.
  • Sale e pepe q.b.

Preparazione

  1. Pelate le patate, lavatele e tagliatele prima in 4 e poi a cubi e bollite in abbondante acqua salata per 15-20 minuti.
  2. Trasferite in una ciotola, schiacciate con i rebbi di una forchetta e aggiungete il sale, il parmigiano, la noce moscata e il pepe. Mescolate il tutto fino a renderlo omogeneo.
  3. Prendete un po’ di impasto e al centro sistemate 1 cubetto di mozzarella.
  4. Dategli la forma di una crocchetta e avvolgete ogni pezzo con 1 fetta di speck.
  5. Adagiate gli involtini si una teglia rivestita di carta da forno e fate cuocere a 200°C per 15-20 minuti circa.
