Perché i fagioli bianchi fanno bene? Questo legume è più importante di quel che pensiamo per il mantenimento del nostro stato di salute. Scopriamo insieme i benefici che può apportare alla nostra vita.

Legumi ottime proteine vegetali

È risaputo che in generale i legumi facciano bene se consumati nei modi e nelle quantità giuste. Parliamo di proteine vegetali facilmente assimilabili dall’organismo, piene di nutrienti e facili da digerire. Uno studio recente ha sottolineato come sempre più giovani decidano di puntare su una alimentazione comprendente lenticchie, ceci, piselli e fagioli.

Questo deriva anche dal fatto che sempre di più, anche a prescindere dal voler seguire uno stile di vita vegano, le nuove generazioni puntano a una alimentazione sana e sostenibile. La ricerca pubblicata su Ebio Medicine del gruppo Lancet ha spiegato come in generale i legumi e in particolare i fagioli bianchi suddetti migliorino il microbiota intestinale. Come? Funzionando come dei prebiotici e quindi aiutando nella crescita dei batteri intestinali buoni.

Un fattore di protezione nei confronti, tra le altre cose, dei tumori del colon retto e di polipi. Entrando più nello specifico nello studio, questo è stato condotto dagli studiosi di oncologia del MD Anderson Cancer Center di Houston. Il campione, formato da circa 50 persone obese che presentavano una storia pregressa di polipi o tumori intestinali, è stato sottoposto a un regime dietetico di 8 settimane che prevedeva, tra le altre cose, una porzione di 16 grammi di fagioli giornaliera.

Lo studio è stato condotto a doppio cieco, con gruppo di controllo. Dopo otto settimane è stata invertita la dieta dei due gruppi, fornendo i fagioli bianchi a chi non li aveva consumati. Ogni quatto settimane sono state eseguite analisi di campioni di sangue e di feci di tutti i partecipanti.

Cosa fanno i fagioli bianchi

I risultati hanno mostrato un cambiamento della flora batterica intestinale in chi aveva mangiato i fagioli. Questi erano cotti al vapore e conservati in scatola in una soluzione di acqua e sale. Al suo interno compariva una maggiore presenza di specie come il Faecalibacterium, l’Eubacterium e il Bifidobacterium.

Allo stesso tempo è stato notato un aumento di alcuni metaboliti batterici positivi e di acido pipecolico, una molecola. Anche i marcatori di infiammazione sono calati. Cosa suggerisce questo? Che le specie vegetali con alto contenuto di fibre sono positive per l’apprato intestinale e che i legumi, ma i fagioli bianchi maggiormente, dovrebbero essere consumati di più all’interno della dieta.

Basterebbe, come illustra lo studio, anche una porzione minima giornaliera.
