Sono sempre più persone che scelgono la dieta senza glutine fai da te, non tanto perché intolleranti a questa sostanza, ma perché convinte di esserne troppo sensibili e soprattutto riconducono gonfiore e chili di troppo alla sua ingestione. In generale le diete fai da te sono pericolose, ma questa lo è ancor di più. Quali sono quindi i rischi?

  • Seguire una dieta senza glutine senza aver fatto alcun test per capire quale sia la patologia, impedisce al medico di fare una diagnosi certa.
  • Rimuovere carboidrati contenenti glutine può nascondere dei problemi non immunologici ma metabolici, per esempio la sindrome metabolica o l’incipiente diabete tipo II.
  • Si possono favorire carenze nutrizionali importante. Molte ricette gluten free sono anche vegane e ciò vuol dire eliminare i carboidrati, ma anche i derivati della carne, del pesce e del latte. Le carenze più frequenti sono quelle di vitamine del gruppo B, del ferro, del magnesio, dell’acido folico e anche della fibra.
  • Eliminare il glutine non aiuta a perdere peso. Risulta quindi una dieta sbilanciata che non favorisce il recupero del peso forma. Come mai? In molte preparazioni senza glutine sono introdotti oli e additivi per mantenere sofficità e fragranza, risultando alla fine più calorici.
  • Se non si è celiaci eliminare il glutine è dannoso perché, con il passare del tempo, il nostro corpo non riconosce più il glutine e lo considera un “nemico” con reazioni avverse anche gravi nel momento in cui viene reintrodotto.
  • Una dieta priva di glutine può aumentare il rischio di patologie cardiovascolari, sindrome metabolica e osteoporosi.
