I Crakers fanno ingrassare?

I crackers hanno un impasto base del tutto simile all’impasto del pane, essi contengono farina, acqua, sale, lievito di birra o lievito al natuarale (a secondo della velocità di lievitazione). Rispetto alle calorie dei crackers è difficile fare una stima dettagliata, ne risulterebbe una lista troppo lunga perchè le tipologie presenti sul mercato sono vaste:  crakers con olio di cocco, crackers all’olio di oliva, carckers al formaggio, crackers con erbe aromatiche, crackers alla pizza, crackers alle olive, ecc. 

Possiamo però fare uno schema base delle calorie dei crackers in base all’impasto base: 

  • Crackers senza grassi: 370 calorie;
  • Crackers integrali: 430 calorie;
  • Crackers ai cereali: 450 calorie;
  • Crackers classici: 450 calorie.

I grassi contenuti nei crackers sono in genere grassi vegetali quali per esempio margarine di cocco o mais. I crackers di questo tipo, a causa del loro contenuto di grassi saturi, sono sconsigliati nei casi di colesterolo alto, in questi casi è meglio optare per crackers a basso contenuto di grassi saturi o crackers senza grassi. I crackers all’olio di oliva o all’olio di semi. Questi ultimi hanno una percentuale di grassi che in genere oscilla tra il 3% e il 25% del  prodotto. 

E’ utile sapere che, quando leggiamo le etichette riportanti i valori nutrizionali, la quantità di grassi indicata porta spesso fuori strada perchè un cracker che contiene meno grassi non è detto che sia preferibile ad un altro con maggiore percentuale di grassi, questo perchè la ridotta quantità di grassi dei crackers coincide con una ridotta quantità di acqua nell’impasto, almeno il 20% in meno del pane.

La quantità minore di acqua determina un maggiore apporto calorico, per 100 grammi di crackers abbiamo circa 400 – 500 calorie, 100 calorie in più rispetto al pane (100 grammi di pane/300 calorie). Rispetto alla scelta dei crackers in base al contenuto del sale, in commercio abbiamo crackers salati, crackers non salati, crackers salati in superficie. Nei crackers salati, in genere il sale è presente in piccole percentuali, circa il 2% del peso.

Per le persone che seguono un regime dietetico ipocalorico sono consigliabili i crackers non salati in superficie.
