Contro il colesterolo, più frutti rossi!

E’ italiana  la nuova ricerca che conferma le virtù degli antociani, antiossidanti naturali  presenti in molti vegetali ai quali conferiscono la tipica colorazione che va dal rosso al blu. Secondo questo studio condotto da Chiara Tonelli, del Dipartimento di Scienze biomolecolari dell’Università di Milano, e presentato a Venezia al quinto Convegno Mondiale sul Futuro della Scienza, gli antociani non solo sono in grado di contrastare malattie cardiovascolari e tumori, ma anche obesità e diabete; questi antiossidanti della famiglia dei flavonoidi infatti, sono in grado di abbassare i livelli di infiammazione che sono spesso alla base di una serie di malattie, tra cui quelle metaboliche.

Sa­rebbero più di 600 i geni influenzati e modificati  dall’azione degli antociani, molti dei quali implicati nello sviluppo di obesità e diabete. Tra gli alimenti più ricchi di queste preziose so­stanze si possono citare mirtilli, arance rosse, ciliegie e melagrana. Quest’ultima in particolare, è già conosciuta per le sue proprietà anti-aterosclerosi, in quanto in grado di contrastare l’accumulo nell’organismo di colesterolo LDL (quello cattivo) e anti diabete, poiché i suoi zuccheri, secondo numerosi studi, non sembrano in­fluire negativamente sulla malattia diabetica.

 

Tra i vegetali meno noti ricordiamo invece il mais rosso, una particolare varietà di questo cereale le cui pannocchie assumono, proprio a causa dell’elevata presenza di antociani, un colore rosso porpora intenso. Per un effetto antiossidante ma anche per contrastare obesità e diabete è importante assumere ogni giorno i frutti di stagione  delle tonalità che vanno dal rosso al viola-blu (arance rosse, melagrana, mirtilli ecc…). Come integratore si può assumere il mais rosso sotto forma di capsule: se ne prendono 2 al giorno con abbondante acqua, preferibilmente ai pasti e per cicli di almeno un mese

    mangiare tutti i cibi a basso indice glicemico, come pane di farro rispetto al pane di grano, per indice glicemico del valore del 25% circa, molti alimenti contenenti grassi vegetali, dall’omega9, olive mature con polpa interna viola!, a semi di lino germogliati, omega3 , a frutta colorata ,di bosco, possibilmente, verdura a foglia verde, eccellente,, cruda tipo portulaca o erba porcellana, cicorie selvatiche, cottura a vapore, evitare latte vaccino,, utilizzare siero della ricotta, di latte pecorino o caprino, ricco di aminoacidi ramificati, con bianchi d’uovo sbattuti, cioe’ proteine pure! ed i rossi d’uovo, sbattuti, con un pò di siero e olio di oliva e/o di semi di lino bio, spremitura a freddo, a mò di zabaione con pane di farina integrale di farro.
