È il caso di questa ciambella, che prevede come accompagnamento una deliziosa gelatina ai frutti di bosco aromatizzata con succo di melagrana, una miniera di antiossidanti preziosi per l’attività metabolica: un trionfo anche del colore rosso, tipico delle feste natalizie.
Con questa preparazione molto facile da realizzare ma senza dubbio di grande effetto, si ottiene un duplice scopo: utilizzare in modo alternativo il panettone, però senza mettere a rischio la linea.
Ingredienti per 6 persone:
per la ciambella:
200gr di panettone
mezzo litro di latte
un’arancia
una stecca di vaniglia
per la gelatina:
400gr di frutti di bosco misti anche surgelati
150gr di zucchero
5 fogli di colla di pesce
il succo di 2 melagrane e di un limone
Fai bollire il latte con la buccia d’arancia e la vaniglia, lascia raffreddare, elimina arancia e vaniglia e incorpora il panettone tagliato a dadini; poi metti il composto in uno stampo da ciambella e lascia in frigo per almeno un paio di ore. In una casseruola metti la frutta di bosco frullata con lo zucchero e fai cuocere a fiamma molto bassa per 10 minuti senza mescolare. Raccogli la salsa in una casseruola, aggiungi la colla di pesce ammollata e strizzata e, a fiamma bassa, continua a mescolare finché la colla non sarà sciolta. Spegni il fuoco e unisci il succo del limone e quello di melagrana (o usa il succo pronto che trovi in erboristeria), fai addensare: servi la salsa con la ciambella di panettone.
