I carboidrati la sera fanno perdere peso

Ci sono persone che decidono di eliminare completamente i carboidrati convinti che siano l’alimento che li fa ingrassare di più. In realtà non è così, soprattutto se non ci sono particolari intolleranze. La notizia di oggi proviene dai risultati di uno studio dell’Università di Gerusalemme che ha evidenziato come nel consumo dei carboidrati sia importante l’ora. Secondo voi fanno ingrassare di più la sera o la mattina?

Per scoprirlo sono state confrontate le diete ipocaloriche (1300 o 1500 kcal al giorno, con il 20% delle calorie da proteine, il 30-35% da grassi e il 45-50% da carboidrati) di 78 persone, divise in due gruppi, per sei mesi.  La differenza tra i due team stava nel fatto che in uno, i carboidrati venivano assunti la sera, durante la cena, e nell’altro, invece, sono stati distribuiti nel corso della giornata.

Da sempre si dice di evitare la pasta la sera, e con pasta ovviamente intendiamo i carboidrati, e preferire, invece, le proteine. Il test ha dimostrato esattamente il contrario: dopo sei mesi la maggior perdita di peso (in media 11,6 kg contro 9), seguita da una maggiore riduzione della circonferenza addominale e della massa grassa, un minor senso di fame e migliori risultati relativi ai livelli di glucosio e colesterolo nel sangue e di alcuni marker dell’infiammazione ci sono stati proprio per il gruppo “serale”.

Il motivo? Gli esperti sostengono che dipenda dalla secrezione degli ormoni leptina e adiponectina. Sono due ormoni di cui abbiamo spesso parlato, perché la prima è quella che regola il senso di sazietà, la seconda, invece, i livelli di glucosio e colesterolo nel sangue, migliora la sensibilità all’insulina e ha un’azione antinfiammatoria. Cosa è successo, i carboidrati la sera regolano questi due ormoni. Gabriele Riccardi, presidente della Società italiana di diabetologia, ha però precisato:

Consumare più carboidrati a cena e meno a pranzo potrebbe essere una scelta ragionevole, poiché durante il riposo notturno gli zuccheri vengono temporaneamente immagazzinati per essere poi rimessi in circolo, sotto forma di glucosio, nel corso della giornata, specialmente quando serve energia per fare uno sforzo fisico.

È ovvio che questo è solo un primo studio e ci vorranno altri dati per confermare l’ipotesi.
