Queste sono solo alcune delle domande che si sono posti gli scienziati della Facoltà di Veterinaria della Cornell University, negli Usa, e alle quali hanno cercato di dare una risposta analizzando i due tipi di latte. I risultati della ricerca sono stati pubblicati sulla rivista Journal of Dairy Science e miravano a scoprire le eventuali differenze nutrizionali tra il latte biologico e il latte convenzionale.
I ricercatori sono partiti dalla constatazione che il consumatore può essere tratto in inganno dalla pubblicità che suggerisce come vi siano differenze tra il latte biologico e il latte rBST-Free, ovvero quello nel cui processo di produzione non è stato utilizzato un ormone per far produrre più latte alle vacche. Come affermano i ricercatori,
“I consumatori hanno una scarsa conoscenza di come il latte viene prodotto e la ricerca di informazioni per la maggioranza degli americani raramente si estende al di là dell’etichettatura sulle confezioni e la commercializzazione. Particolarmente preoccupante è che alcuni clienti possono percepire che questo tipo di speciale etichettatura indichi differenze di qualità, valore nutrizionale, o la sicurezza dei prodotti lattiero-caseari”.
Per lo studio sono stati analizzati 292 tipi di latte in commercio per valutarne i valori nutrizionali ed, infine, ridurre la valutazione della loro composizione in acidi grassi. I ricercatori hanno trovato solo differenze statisticamente significative tra il profilo degli acidi grassi del latte biologico e convenzionale, ma nessuno di questi sono stati giudicati rilevanti. I tipi di latte sono tutti considerati simili in qualità nutrizionali e salubrità. Inoltre, secondo gli scienziati, le differenze erano ambigue.
I ricercatori ritengono che in questo quadro di situazione è forse più importate valutare il profilo nutrizionale di una bevanda che non le pratiche di gestione della produzione.
