L’olio è il condimento più usato in assoluto e anche il più versatile dato che si può utilizzare sia a crudo che in cottura; esistono tanti tipi di olio e noi vogliamo parlarvi di un olio particolare, nato da poco ma che ha già vinto il premio Sial 2010 come prodotto innovativo: si tratta dell’olio veg, ossia dedicato ai vegetariani e ai vegani.
Quest’olio è il frutto di un lavoro a quattro mani dell’Istituto di ricerca Filarete di Milano e degli esperti del centro studi dell’alimentazione (NFI – Nutrition Foundation Italy), e in apparenza sembra un olio come gli altri: ha lo stesso colore verde degli altri oli, nonché lo stesso sapore, ma è nella composizione che si differenzia dagli oli comuni.
La vera novità dell’olio veg consiste nel fatto che è arricchito di alcuni principi nutritivi, quali vitamina B12 e la vitamina E delle quali alcuni vegetariani e vegani sono carenti. Anche l’olio veg si potrà comprare al supermercato, esattamente come gli altri oli specifici, ad esempio come quello per gli sportivi, per l’età evolutiva e per la terza età e, sull’etichetta, verrà chiaramente indicato che si tratta di un olio veg.
Insomma l’olio veg si colloca sulla scia dell’olio “Omega 3&6”, preparato con un mix di oli vegetali che, tutti insieme contribuiscono a fornire all’organismo gli omega 3 e gli omega 6, nel rapporto consigliato dai nutrizionisti.
Tante sono le sperimentazioni per la creazioni di nuovi oli; oltre all’olio veg, c’è anche il cosiddetto Olio Junior+, arricchito con Omega 3 DHA, vitamina A, D, E ed inserito in uno studio clinico condotto dal primario dell’Ospedale del Bambino Gesù di Roma, il professor Giuseppe Morino, per il quale l’azienda che lo produce, devolverà 15 centesimi per ogni bottiglia venduta per supportare le ricerche ospedaliere.
