Il pane torna a essere protagonista delle nostre pagine. La settimana scorsa uno studio americano ha proposto di addizionarlo con la vitamina D per assicurare la giusta dose calcio alle ossa e prevenire l’osteoporosi, ora invece, in Lombardia, è partito un progetto per diminuire il sale. L’obiettivo? Prevenire e combattere le malattie cardiovascolari e dare un contributo all’adozione di comportamenti più consapevoli per la salute.
L’iniziativa si chiama “Con meno sale nel pane c’è più gusto. E guadagni in salute” e coinvolge circa 200 panificatori lombardi che si sono impegnati a produrre e a vendere pane con ridotto contenuto di sale rispettando gusto, fragranza e qualità e senza differenza di prezzo. La sperimentazione, l’anno scorso, ha riscosso molto successo: è ora il momento di passare ai fatti.
In che misura cambierà il contenuto di sale? La quantità di sale passerà dal 2 per cento sul totale della farina all’1,8 per cento fino al 31 dicembre 2011 e all’1,7 per cento entro il 30 giugno 2012. Una lenta diminuzione che permetterà alle persone di abituarsi gradualmente. Non si passerà direttamente al pane sciapo toscano. Gli amanti del pane possono davvero stare tranquilli. Luciano Bresciani, assessore regionale alla Sanità, ha dichiarato:
La riduzione dell’assunzione di sale con la dieta è un obiettivo di salute di estrema importanza: un consumo eccessivo determina, infatti, un aumento della pressione che a sua volta aumenta il rischio d’insorgenza di gravi malattie, come l’infarto e l’ictus. Si tratta di un progetto che punta dunque a dare il buon esempio per una migliore qualità della vita.
