Gli studi condotti in passato hanno sempre suggerito che sia il tè verde che il tè nero possiedono proprietà protettive, attribuite al contenuto di polifenoli. In particolare il tè verde, si ritiene essere ricco di flavan-3-oli (flavanoli) che sono composti attivi contro i radicali liberi. A queste si aggiungono proprietà anticolesterolo e neuroprotettive. Ma il ricercatore ha voluto anche sottolineare, che oltre a questa svolta, il team è stato in grado di verificare che questi composti digeriti hanno proprietà anti-cancro, perché rallentano in modo significativo la crescita delle cellule tumorali. La teoria dei processi digestivi è importante per qualsiasi alimento, perché solo così si può avere la certezza che il corpo sia in grado di assordirlo. Ciò che resta ancora oscuro sta nel fatto che non si conosce ancora come il metabolismo possa influenzare le presunte proprietà di questi polifenoli.
