La verdura come primo piatto riduce le calorie e la glicemia

 

Esiste un pasto ideale? È ovvio che sì. È davvero molto importante che la dieta quotidiana sia ben bilanciata. Dai ricercatori dell’Università di Osaka (Giappone) arriva il consiglio di usare un trucchetto: mangiare una buona dose di verdura prima di cominciare: invece, del solito primo o dell’antipasto, una bella insalatona. In tanti ristoranti già si fa.

Questa strategia serve per saziare, diminuire di conseguenza le calorie che verranno poi ingerite durante il pasto e controllare la glicemia nei casi di diabete di tipo 2. Non è poi un sacrificio così grande. Molte persone consumano l’insalata o le verdure come contorno o alla fine del pasto, basta solo spostare l’ordine delle portate. Si è giunti a questa tesi dopo aver monitorato un gruppo di pazienti diabetici.

I medici si sono accorti che queste persone avevano livelli di glicemia più bassi quando la verdura veniva mangiata all’inizio del pranzo o della cena. Così si è deciso di fare uno studio un po’ più approfondito. I medici hanno raccolto due gruppi di volontari diabetici: al primo è stato fatto seguire il metodo «verdura prima, carboidrati poi», al secondo invece la tecnica più complicata chiamata «razioni di scambio».

Quali sono stati i risultati? Dopo un anno bisogna dire che entrambe le diete hanno abbastanza funzionato. Sicuramente quella che ha portato livelli di benefici maggiori è stata la prima che ha mostrato una riduzione dell’emoglobina glicata, ma anche della pressione e dei livelli dei lipidi plasmatici. Gabriele Riccardi, presidente Società italiana di diabetologia ha commentato:

Iniziare il pasto con delle verdure, molto voluminose ma poco caloriche comporta una dilatazione dello stomaco e, quindi, un importante stimolo alla sazietà che, a sua volta, induce a ridurre la successiva assunzione di cibi più ricchi di energie e causa dell’innalzamento della glicemia soprattutto nelle persone con diabete. Attenzione, però: perché questo segnale arrivi al cervello occorrono almeno 15 minuti quindi è bene “prendere tempo” tra una portata e l’altra e masticare a lungo ogni boccone.
