popcorn e antiossidantiQuando pensiamo ai popcorn, oltre a legarli inevitabilmente al cinema, pensiamo a snack poco salutari da eliminare dalla dieta; eppure, secondo un recente studio americano i popcorn conterrebbero più antiossidanti di frutta e verdura, in particolare i polifenoli, delle sostanze antiossidanti in grado di agire in modo benefico sull’organismo, di ridurre il rischio di insorgenza di diverse malattie e di mantenerci più giovani.

Lo studio dell’Università di Scranton in Pennsylvania è stato condotto dal dottor Joe Vinson, il quale ha voluto analizzare le proprietà dei popcorn, da sempre considerati uno snack più che un alimento vero e proprio. Durante le sue ricerche, il dott. Vinson ha scoperto che i popcorn contengono una notevole quantità di polifenoli e che la maggiore concentrazione di fibre e antiossidanti si trova nella pellicina del guscio, quella che riveste il chicco.

Grazie alle scoperte del dottor Vinson e del suo staff, i popcorn possono essere annoverati di diritto alla categoria dei cibi salutari, come spiega lo stesso medico:

Questi gusci meritano più rispetto. Sono delle pepite d’oro nutrizionali. Popcorn può essere il cibo per la merenda perfetta. E’ il solo snack che è 100% grano integrale non trasformato. Tutti gli altri cereali vengono elaborati e diluiti con altri ingredienti, e sebbene cereali siano chiamati “integrale”, ciò significa semplicemente che oltre il 51 percento del peso del prodotto è integrale.

Un vero e proprio cibo integrale, dunque, e come tale ricco dei benefici che un prodotto non lavorato può offrire; basti pensare che una porzione di popcorn è in grado di offrire circa il 70% dell’assunzione giornaliera di grano integrale, considerando anche che, generalmente, le persone assumono solo la metà di una porzione di cereali integrali.

Tutto bello, quindi? Sembra proprio di sì, ma solo per quello che riguarda il cibo in sé: il problema, infatti, è dato dalla cottura, che è l’elemento che può fare la differenza e trasformare un cibo salutare in uno dannoso. Attenzione, quindi, a come si preparano i popcorn; secondo il dott. Vinson il metodo ideale sarebbe quello ad aria calda che non prevede l’aggiunta do olio o burro da friggere; vietato anche aggiungere il sale o lo zucchero, condimenti che fanno diventare i popcorn una bomba calorica. A proposito del metodo di cottura dei popcorn, il dott. Vinson spiega:

I popcorn cotti ad aria hanno naturalmente il più basso numero di calorie. Quelli cotti al microonde o nell’olio, per esempio, contengono il doppio di calorie di quelli cotti con l’aria calda. Si consideri che il 43 percento dei popcorn cotti al microonde è grasso rispetto al 28 percento di quando si fanno cuocere soltanto in olio.

Popcorn salutari sì, ma sottolineano i ricercatori, non devono sostituire la frutta e la verdura, in quanto i vegetali freschi contengono sostanze, come sali minerali e vitamine, che i popcorn non hanno.
