La farina di castagne è un prodotto molto conosciuto, ma poco utilizzato in cucina. È alla base di moltissimi piatti famosi, come il castagnaccio. È una farina dolce, che si ottiene essiccando e macinando finemente le castagne. Dovremmo imparare a riscoprirla perché ha un elevato valore nutrizionale.
Quali sono le principali caratteristiche? Le castagne sono ricche di carboidrati complessi e per questo motivo sono un’ottima alternativa ai cereali. Contiene quindi carboidrati (76,2 g/100 g di farina) e amidi in particolare, proteine (6,1 g/100 g di prodotto) e grassi (3,7 g/ 100 g di farina). I restanti 11,4 g sono costituiti da acqua. La farina di castagne è fonte di sali minerali, tra cui magnesio, zolfo, potassio (soprattutto), ferro e calcio, oltre al discreto contenuto di vitamine B1, B2, C e PP. Le calorie? più di 340 per 100 grammi.
Si può usare per fare pane e pasta fresca (vengono degli ottimi tortelli ripieni di formaggi o le fettuccine, in questo caso però si consiglia di mescolare la farina con la classica 00 per ottenere impasti più morbidi da tirare e da cuocere), ma anche al posto della polenta con la farina di mais. A differenza dalle altre farine ottenute da frutta secca, la farina di castagne presenta un bassissimo contenuto in grassi: a tal proposito, alcuni dietologi consigliano l’impiego della farina di castagne in sostituzione ad altre farine (es. mandorle).
È un’idea interessante anche gli gnocchi con la farina di castagne, nella ricetta dovete sostituire la farina di grano. Il sapore sarà ovviamente un po’ più dolciastro e piacevole, soprattutto se conditi nel modo giusto.
