L’Organizzazione Mondiale della Sanità (OMS) nel 2015 ha inserito la carne rossa nel Gruppo 2A: parliamo di quello nel quale figurano i prodotti potenzialmente cancerogeni. In quello dei sicuramente cancerogeni appaiono le carni lavorate. Questo ci suggerisce l’esistenza di una correlazione tra questi cibi e il rischio di sviluppare il cancro.

Non si ha la certezza che possano causarlo, ma potrebbero in via potenziale. Ecco quindi che dobbiamo stare attenti al consumo di carne rossa ma anche di prodotti in scatola. Wurstel, bacon, salsicce e altri alimenti simili. La pericolosità è data dai nitriti e dai nitrati usati per processare e conservare.

Come spiega anche l’Associazione Italiana per la Ricerca sul Cancro (AIRC) i nitriti e i nitrati una volta nel nostro organismo possono essere trasformati dai processi metabolici in nitrosammine, molecole potenzialmente cancerogene. Queste sono capaci di creare danni al DNA dando vita a mutazioni che possono portare allo sviluppo dei tumori.

Quanta possiamo mangiarne davvero

Allo stesso modo anche la cottura ad alta temperatura può portare a questa trasformazione. Immaginate quindi unire la carne rossa e il suo consumo a una cottura non salutare: è normale che vengano considerati prodotti potenzialmente a rischio. Questa nello specifico viene associata a un maggiore rischio di cancro al colon retto.

Quanta carne rossa possiamo consumare quindi? L’OMS parla di massimo 500 grammi a settimana e di evitare il consumo di carne lavorata. Molto poca se non per nulla deve essere mangiata secondo il World Cancer Research Fund, mentre per la carne rossa ci si dovrebbe limitare a tre porzioni settimanali al massimo.

Come in ogni ambito della nostra vita dobbiamo regolarci anche in base alle nostre condizioni di salute. Va da sè che qualcuno che soffre di patologie renali tenderà a consumare al massimo una porzione al mese di carne rossa, favorendo proteine vegetali o carni bianche. Mentre chi si allena, pur favorendo il petto di pollo non disdegnerà una bistecca al sangue ogni tanto. Come in ogni cosa la parola d’ordine deve essere “giudizio“.
