Una dieta caratterizzata da poca carne rossa rimane una delle maggiori protezioni dall’infarto: ancora uno studio dedicato mostra come dimezzare il consumo di questo specifico alimento possa apportare dei benefici all’organismo e proteggere da malattie cardiache in grado di risultare mortali.

L’infarto del miocardio è uno di quegli eventi medici che richiede delle cure immediate per minimizzare quelle che sono le conseguenze sul cuore: è importante comprendere che sebbene lo stesso possa colpire all’improvviso, a spianargli la strada sono spesso comportamenti alimentari ed uno stile di vita sbagliato. Sempre più studi negli anni hanno mostrato come la dieta sia un fattore influente sulla salute della persona e come in particolare vi sia un collegamento tra le malattie cardiache ed il consumo di carne rossa. Non è un caso che nella dieta mediterranea ed in qualsiasi regime dietetico sia consigliando un maggiore consumo di carni bianche.

Nello studio recentemente condotto dal professor Andrew Salter, della University of Nottingham è emerso ancora una volta il ruolo chiave degli acidi grassi saturi: è la loro grande quantità contenuta nella carne rossa a rendere la stessa un cibo in grado di spianare la strada a patologie croniche, cardiache ed al cancro al colon. Un percorso che danneggia l’organismo anche in coloro abbastanza giovani e sani andando ad agire sul colesterolo LDL.

Secondo lo studio, condotto su un campione di 46 persone, è possibile registrare cambiamenti positivi anche solo dimezzando la carne rossa e quindi portando al calo del colesterolo cattivo nel sangue, considerato la maggiore causa di infarto del miocardio. I volontari hanno ridotto l’assunzione di carne rossa per un periodo di 12 settimane sostituendolo con carne bianca, pesce o sostituti della carne, sottoponendosi ad esami del sangue a cadenza regolare.

Il problema? Eliminando la carne rossa in maniera sensibile i partecipanti hanno subito sì un calo del colesterolo, ma anche quello di globuli rossi e bianchi nel sangue. Come ha spiegato dott.ssa Liz Simpson dell’Università di Nottingham, coautrice dello studio, questo dipende dai micronutrienti contenuti nella carne necessari per la produzione delle cellule nel sangue. Ha quindi aggiunto:

Sebbene sia possibile ottenere questi nutrienti nelle diete a base vegetale, i risultati suggeriscono che, riducendo l’assunzione di carne, si deve necessariamente integrare la dieta con un’ampia varietà di frutta, verdura, legumi e cereali integrali per fornire questi nutrienti.

La dieta mediterranea è uno dei regimi che più si adattano a risultare ottimali per ovviare alla mancanza.
