Le fibre alimentari sono costituite da residui di cellule vegetali resistenti agli enzimi digestivi umani; in altre parole, si tratta di sostanze nutritive che il nostro organismo non è in grado di digerire e quindi utilizzare come fonte di energia. Nonostante questo esse sono di fondamentale importanza per il mantenimento di uno stato di benessere generale poichè migliorano la funzionalità intestinale, contribuiscono all’eliminazione del colesterolo, rallentano l’assorbimento di grassi e carboidrati e abbassano la glicemia. In particolare, le fibre solubili, provenienti soprattutto da frutta e legumi, favoriscono il controllo di glicemia e colesterolemia, mentre le fibre insolubili, contenute soprattutto in cereali e ortaggi, svolgono una funzione regolatrice delle funzioni intestinali e avrebbero proprietà anti-tumorali.

Sembra però che i benefici effetti delle fibre solubili non si esauriscano nel breve elenco appena fornito: infatti, secondo i risultati di una ricerca dell’Università dell’Illinois, pubblicati dalla rivista sceintifica Brain Behavior and Immunity, assumere fibre solubili, in particolare quelle della frutta, è utile per rafforzare il sistema immunitario e aiuta a guarire prima dalle infezioni.

Lo studio è stato condotto su due gruppi di cavie da laboratorio alimentati con una dieta ipocalorica e ricca di fibre: al primo gruppo sono state inserite nella dieta fibre solubili, mentre all’altro gruppo sono state sommnistrate solo fibre insolubili.

Dopo sei settimane di dieta alle cavie è stata iniettata una sostanza in grado di simulare un’infezione batterica; a questo punto i ricercatori hanno osservato, a sole  due ore dall’iniezione, che i topi che avevano assunto fibre solubili avevano un’infezione inferiore del 50 per cento rispetto a quelli che non ne avevano assunte e, allo stesso tempo, si avviavano più velocemente degli altri verso la guarigione. Questo perchè, spiegano gli studiosi, le fibre solubili sono in grado di attivare la produzione di  interleuchina 4, una proteina che ha un forte effetto anti-infiammatorio.
