Dolci per diabetici: torta di mele e noci

La torta di mele e noci è un dessert squisito, particolarmente indicato per chi soffre di diabete, ma è perfetto anche per chi segue una dieta ipocalorica e non può eccedere con gli zuccheri e i grassi. Ogni porzione, infatti, contiene solo 60 calorie.

La mela, infatti, contiene zuccheri che, per le loro caratteristiche chimiche, non hanno alcuna controindicazione per i diabetici. Si tratta di un frutto ricco di vitamine, sali minerali e oligoelmenti preziosi per la salute del nostro organismo. Inoltre, la buccia della mela contiene la pectina, una fibra idrosolubile che aiuta ad abbassare i livelli di colesterolo nel sangue. Anche le noci sono una miniera di sali minerali e di grassi polinsaturi, alleati contro il colesterolo cattivo.

Ingredienti per una torta porzionabile in 10 fette da 60 g

  • 750 g di mele
  • 100 g di farina 0
  • 75 g di farina integrale
  • 75 g di burro
  • 50 g di gherigli di noci tritati
  • 5 g di lievito in polvere
  • 10 g di dolcificante liquido
  • Succo di mezzo limone
  • 1 uovo
  • un pizzico di cannella

Preparazione

Prima di tutto, disponete le farine a fontana sulla spianatoia e aggiungete il burro, l’uovo, il lievito in polvere e 5 g di dolcificante liquido. Impastate bene fino ad ottenere un impasto frollo, ma al tempo stesso compatto. Tirate una sfoglia di 5-6 millimetri di spessore. Mettete l’impasto in un tegame antiaderente del diametro di circa 25 cm, avendo cura di stenderlo sul fondo e sulle pareti e con una forchetta bucherellate la pasta frolla, per evitare che si formino le bolle.

Sbucciate e detorsolate le mele, poi tagliatele a fettine sottili e adagiatele sulla tortiera sino a coprire l’intera superficie. Cospargere col succo di limone e con il dolcificante liquido avanzato, e spargete i gherigli di noce sminuzzati. Mettete in forno alla temperatura di circa 200°C e lasciate cuocere per circa tre quarti d’ora. Prima di servire, fate raffreddare.
