Il carpaccio di zucchine, ricetta gustosa e dietetica

La ricetta che sto per presentarvi – il carpaccio di zucchine – pur essendo molto leggera è davvero gustosa e vede la zucchina come protagonista assoluta. Questo ortaggio contiene molti minerali preziosi quali sodio, potassio, ferro, calcio, fosforo, manganese, zolfo e cloro e tante vitamine (la B2, PP, A e in maniera più modesta la C), è estremamente ricco d’acqua (per ben 93 grammi su 100 di peso complessivo) ed è caratterizzato dalla quasi totale assenza di calorie, inoltre contiene una presenza di amidi molto bassa (soltanto l’1% del suo peso).

Dato il suo sapore relativamente neutro, la zucchina si presta ad una varietà di preparazioni alimentari: molto versatile, accompagna primi piatti, carne, pesce, formaggio e uova (un consiglio: se si desidera beneficiare pienamente delle proprietà nutritive, la soluzione migliore è quella di mangiarla cruda, all’insalata o sotto forma di succo) ed è ideale nei regimi ipocalorici (anche se la polpa porosa assorbe molto i condimenti).

Le zucchine inoltre agiscono nell’organismo con un’efficace e potente azione diuretica, hanno un discreto effetto lassativo e risultano ottimali in caso di stipsi (consumate allora la zucchina compresa della buccia, in particolare dove sono presenti le fibre) come per la ritenzione idrica, per la cellulite e nella tendenza alla calcolosi renale.

Ingredienti per quattro persone:

4 zucchine medie

2 limoni freschi

2 cucchiai di olio extravergine , rucola

sale e pepe q.b.

Procedimento:

Lavate, asciugate le zucchine e tagliatele a fettine sottilissime e poggiatele delicatamente all’interno di una pirofila. Separatamente preparate un battuto composto di olio e limone ed amalgamate bene. Lo si verserà in un secondo momento su ogni strato di zucchine aggiungendovi sale e pepe. Per insaporirle, lasciatele marinare per tre ore. Servitele poi con piccole decorazioni e utilizzate abbondante rucola. E’ possibile rendere ancora più appetitoso il piatto, spolverando del parmigiano grattugiato. Avrete una pietanza deliziosa, poco calorica e molto saporita.
