Secondo piatto light: insalata di pollo

insalata-di-polloIn estate, si sa, è sempre difficile trovare dei secondi piatti a base di carne che siano allo stesso tempo gustosi, freschi e nutrienti

Oggi noi ve ne proponiamo uno che riesce ad abbinare tutte e tre queste qualità con in più un occhio di riguardo alla linea, e cioè l’insalata di pollo, un ottimo secondo piatto che oltre alle proteine della carne, offre tutta la freschezza che solo le verdure possono dare, e il tutto in sole 180 calorie a porzione.

Ingredienti per 8 persone
600 g. di pollo, 100 g. di prosciutto cotto, 200 g. di fagiolini verdi, due mazzetti di radicchio rosso, un mazzetto di rucola, una carota, una cipolla, 100 g. di formaggio groviera, pepe nero.

Ingredienti per la salsa allo yogurt
Un vasetto da 125 g. d yogurt intero, un cucchiaino di olio extravergine d’oliva, mezzo spicchio di aglio tritato finemente o spremuto, un cucchiaio di erba cipollina tritata, mezzo cucchiaino di semi di cumino, sale.

Preparazione

In una casseruola riscaldate acqua salata insaporita con una carota pelata, una cipolla pulita dalle foglie esterne e qualche grano di pepe nero. Appena l’acqua bolle, abbassate la fiamma, aggiungete il pollo e lasciate cuocere per 20 minuti e fate raffreddare.

Spuntate i fagiolini, tagliateli a pezzettini e cuoceteli in acqua salata bollente per 10 minuti; una volta scolati, raffreddateli con acqua fredda. Sgrassate e tagliate a listarelle il prosciutto cotto e tagliate a dadini il formaggio. Lavate e asciugate le insalate, lasciando intere le foglie di rucola e tagliando a listarelle il ridacchio. In un contenitore a parte preparate la salsa allo yogurt per condire l’insalata, mescolando tutti gli ingredienti indicati.

Quando il pollo è completamente freddo sfilacciatelo con le mani, e poi raccogliete in un unico contenitore il pollo, l’insalata, i fagiolini, il formaggio e il prosciutto cotto, e solo al momento di servire condite il piatto con la salsa allo yogurt.

L’insalata di pollo può essere conservata in frigo per due o tre giorni all’interno di un contenitore ermetico.
