La zucca è la vera regina dell’autunno e ha tantissime proprietà benefiche. Ecco perché è necessario imparare qualche ricetta, ovviamente light e facile, per consumarla quanto più possibile. Ricordiamoci che fa bene, ma è anche molto buona. Piace ai grandi e pure ai bambini.
Tagliatelle alla zucca e ricotta
Ingredienti
- 400 gr pasta di semola
- 300 gr zucca
- 150 gr ricotta (anche affumicata)
- 1 mazzetto salvia
- 1 mazzetto timo
- 1/2 cipolla
- q.b. olio di oliva extravergine
- q.b. noce moscata
- q.b. sale
Procedimento
Tritate finemente la cipolla e fatela soffriggere in una padella antiaderente con un filo di olio, le foglie di salvia e un pizzico di sale. Grattugiate la zucca con la grattugia a fori grossi. E unitela al soffritto: fatela appassire 5 minuti, aggiungendo un po’ di acqua calda. A fine cottura unite anche la ricotta, la noce moscata e il sale. Pronto il sugo per condire la vostra pasta.
Puré di zucca
Ingredienti:
- 1 fetta di zucca (da 300 a 500 gr)
- 2 carote
- 3 patate grosse
- 1 cucchiaio di olio evo
- una manciata di semi di zucca (circa 10 gr)
Procedimento
Lavate e tagliate a fettine la zucca e le patate. Versate l’acqua nella pentola a pressione, aggiungete le verdure tagliate e fate cuocere per 15 minuti da quando la pentola fischia. Se non avete la pentola a pressione, potete far cuocere le verdure al vapore. Versate le verdure in una ciotola e frullale con un mixer. Potete aggiungere 2 cucchiai di latte scremato. Pronto il vostro puré, che è una valida alternativa a quello di patate.
