Ricette light di primavera: insalata di cicorie, kiwi e mandarini

Con l’arrivo dei primi tepori primaverili, oltre al guardaroba viene voglia di cambiare anche l’alimentazione e di inserire nei menù qualche piatto colorato e allegro; proprio quello che vi presentiamo oggi, ovvero l’insalata di cicorie, kiwi e mandarini, che ha anche il pregio di essere piuttosto light: contiene, infatti, 150 calorie a porzione. Questa insalata si basa sul contrasto tra i sapori, e cioè tra quello amarognolo delle cicorie e quello dolce e fruttato dei kiwi e dei mandarini.

Insalata di cicorie, kiwi e mandarini

Ingredienti

80 g. di indivia riccia, 80 g. di cicorino, 1 cespo di insalata belga, 2 cespi di radicchio trevigiano, 2 kiwi, 4 mandarini, 1 gambo di sedano bianco, 1 barbabietola, succo filtrato di un limone, 20 g. di olio extravergine d’oliva, un cucchiaio di aceto balsamico, sale e pepe.

Preparazione

Lavate e asciugate le insalate, spezzettate le foglie di indivia riccia, suddividete le foglie di cicorino e dell’insalata belga, tagliate i cespi di radicchio a quarti. Pelate i kiwi e tagliateli a rondelle, sbucciate i mandarini, divideteli a spicchi e privateli della pellicina.

Lavate e affettate sottile il sedano; intanto cuocete a vapore la barbabietola, pelatela e frullatela insieme al succo di limone, l’olio, l’aceto balsamico e salatela a piacere. Preparate l’insalata disponendo in una ciotola le foglie di insalata e i cespi di radicchio, distribuite sopra il sedano affettato e la frutta, condite con la salsa alla barbabietola e con una macinata di pepe prima di servire.
