Polpo, calorie e valori nutrizionali

È polpo è un animale acquatico molto apprezzato in gastronomia. Spesso viene chiamato piovra o erroneamente polipo (erroneamente perché il polipo è un altro animale). Come viene cucinato? I metodi sono numerosi: dalla lessatura alla cottura in umido, se freschissimo, può essere proposto a crudo, possibilmente come carpaccio con qualche goccia di limone. È eccellente alla griglia, condito con del semplice olio d’oliva a crudo. Il polpo è molto adatto alle diete dimagranti, perché ha un buon apporto proteico,  un alto potere saziante mentre è a basso contenuto calorico.

 

Fate però molta attenzione, perché è un cibo potenzialmente allergizzante e va dato ai bambini nel secondo anno di vita. Durante la prima fase dello svezzamento è sconsigliabile. In caso di gotta, bisogna evitare, perché ha un’elevata concentrazione di purine. Vediamo quindi quali sono le calorie e i valori nutrizionali per 100 grammi di prodotto:

Ricordiamo che come tutti pesci, deve essere tenuto nell’abbattitore se volete consumarlo a crudo. altrimenti la carne va battuta o frollata per rendere la carne più morbida. nell’acqua di cottura, aggiungete dell’aceto o un tappo (metodo non di sicura efficacia) per renderlo più tenero.
