Mangiare funghi aumenta i livelli di vitamina D

Per proteggere le ossa ci vuole un giusto apporto di vitamina D. Quali sono i cibi più adatti per far rifornimento? Un nuovo studio, condotto dai ricercatori australiani della Sydney Medical School, ha dimostrato che mangiare i funghi aumenta i livelli questa sostanza nel corpo. Potrebbe essere, quindi, in autunno e in inverno, una valida alternativa all’esposizione al sole.

Ricordiamo che il sole è prezioso perché permette di legare meglio la vitamina e seppur presente tutto l’anno, le basse temperature e gli impegni professionali non ci permettono lunghe camminate o di passare molto tempo all’aria aperta. Ecco quindi che impostare una dieta corretta diventa fondamentale. Quanti funghi bisogna mangiare? Sono sufficienti 3 o 4 funghi al giorno – anche del tipo Champignons – per ottenere la quantità giornaliera raccomandata di vitamina D. Le persone sedentarie dovrebbero aumentare un pochino la dose.

Alla base della ricerca ci sono proprio gli Champignons, un tipo di fungo molto comune, reperibile nei supermercati praticamente tutto l’anno e poi è economico, quindi a portata di tasca anche in tempo di crisi. Prima di mangiarli, andrebbero lasciati alla luce del sole per qualche ora, affinché si completi una reazione chimica alla base della produzione fotochimica che promuove la produzione di vitamina D. Questa semplice tecnica consente quindi di conservare la vitamina nei funghi anche dopo averli cotti.

Perché questa sostanza è importante? Come abbiamo detto in diverse occasioni, protegge dall’osteoporosi, rendendo più forti le ossa. È importante non esagerare con le dosi, ma soprattutto evitare carenze perché possono causare dolori e debolezza muscolare. I fughi sono anche ipocalorici e quindi perfetti per chi sta a dieta. Infatti, durante la ricerca, cui hanno preso parte 73 persone obese o in sovrappeso, lei volontari che ha consumato la quantità prestabilita di funghi hanno perso in media 3 chili, con una riduzione-record del girovita di 6,5 centimetri.

Non è tutto, perché sono ricchi di sali minerali, vitamina B3 e B2. Inoltre, rafforzano il sistema immunitario, svolgendo un’azione simile a una sorta antibiotico naturale e risultano perfetti per proteggersi dai malanni autunnali. Basta solo ricordarsi di portarli in tavola, ora che arriva l’autunno. Non acquistate i prodotti surgelati, se potete.
