Quando si parla di carne cruda in realtà bisogna fare una distinzione tra carne cruda conservata come speck, bresaola, prosciutto crudo, ecc. e carne cruda fresca servita al carpaccio, macinata, tritata finemente, ecc. Vediamo insieme quali sono i benefici e se esistono dei rischi per la salute.
La carne cruda conservata deriva quasi esclusivamente da bovino, suino ed equino da macello, quella fresca invece da bovino giovane, cavallo da macello e anatra. Va subito detto che i benefici nel mangiare carne cruda non sono molti e si limitano alla conservazione dell’integrità dei Sali minerali e delle vitamine termolabili come vitamina B1, B2, B5 e vitamina A.
A fronte dei benefici che sono abbastanza modesti, la carne cruda, oltre ad essere meno digeribile di quella cotta, presenta alcuni rischi per la salute che non sono da sottovalutare. Non è un caso del resto che in gravidanza venga sconsigliato di mangiare insaccati e carni salate o crude. Alcuni animali, infatti, sono potenziali portatori di parassiti, batteri e virus e come l’Escherichia Coli o la salmonella. Capita spesso di sentire casi di persone colpite da un’infezione alimentare proprio dopo aver consumato carne cruda.
Il consiglio è quello di evitare di mangiare carne cruda e anzi, di cuocerla bene, soprattutto quando si fanno grigliate con salsicce, spiedini e hamburger. La carne di pollo e quella macinata sono infatti particolarmente delicate sotto il profilo igienico. Inoltre, è bene limitare al minimo indispensabile la conservazione dei cibi a temperatura ambiente, sia prima sia dopo la cottura.
