I condimenti per sostituire l’olio d’oliva in cucina

L’olio d’oliva è il condimento principe della dieta mediterranea, è più salutare e anche il più buono (soprattutto se consumato a crudo). Si può sostituire con altri prodotti? La risposta è sì, ma attenzione alle calorie e alla linea.

Burro

È il condimento di origine animale per eccellenza, ma va dosato con molta cura.

Margarina

La margarina è un grasso alimentare semisolido che non esiste in natura. È un surrogato vegetale per antonomasia, non rappresenta, però, la scelta migliore dal punto di vista della salute.

 

Yogurt

La Grecia e non solo insegna: mixata lo yogurt bianco con qualche spezia o aroma (erba cipollina, aneto, cetriolio tritato).

Vinaigrette senza olio

Stemperate un po’ di aceto bianco, limone e una punta di senape. Viene utilizzata come condimento per verdure o insalate. Esistono molte varianti della Vinaigrette. La ricetta “tradizionale” prevede l’utilizzo di olio, ma potete tranquillamente farne a meno e ottenere un risultato ottimo.

 

Salsa di soia

Oltre a sostituire l’olio serve per eliminare il sale. È estremamente gustosa e perfetta per cucinare la carne, il pesce e anche le verdure. Potreste copiare qualche piatto orientale a base di riso. Successo assicurato.

Maionese senza olio

Portate due bicchieri d’acqua a ebollizione con un cucchiaio di amido di mais, uno di aceto bianco. Appena il composto è raffreddato mettetelo in un mixer con due tuorli d’uovo, il succo di due limoni spremuti, un cucchiaino di senape e sale e pepe.

 

Succo di arancia o pompelmo

I profumi della Sicilia sono racchiusi negli agrumi, che spremuti possono essere utilizzati per condire insalata di frutta e verdura, pesce o anche carne.
