Buone notizie per chi è allergico alle proteine del latte. Sembra, infatti, che mangiare dolci e biscotti contenenti latte cotto, aiuti a superare la malattia.

Chi è allergico, infatti, può finalmente dire SI a latte e formaggi consumando quantità sempre maggiori di latte cotto. La speranza, arriva da uno studio condotto di recente dal Food Allergy Institute della Mount Sinai School of Medicine, a New York, appena pubblicato sul “Journal of Allergy and Clinical Immunology“.

Lo studio è partito da una semplice costatazione: le alte temperature che si usano per cucinare dolci e biscotti denaturano le proteine del latte, rendendole del tutto innocue per chi è allergico. Sulla scorta di tale osservazione, il team ha esaminato 88 bambini e ragazzi, tutti allergici, dai 2 ai 17 anni, a cui, per 5 anni, sono stati somministrati cibi contenente latte cotto e poi, di volta in volta, dosi sempre maggiori di latte crudo. Come ha spiegato la pediatra e allergologa Anna Nowak-Wegrzyn:

Come primo “contatto” con il latte cotto abbiamo dato ai bambini un muffin o un waffle (il dolcetto morbido tipico degli Stati Uniti e una sorta di cialda): il 75 per cento dei bimbi non ha avuto una reazione allergica. I piccoli che hanno avuto reazioni allergiche ovviamente hanno proseguito la loro consueta dieta di esclusione; gli altri hanno potuto introdurre cibi come dolci e biscotti nella loro alimentazione quotidiana, seguendo le precise indicazioni fornite ai genitori.

Dopo 6-12 mesi, i bambini che avevano ben tollerato i dolci, hanno mangiato un pezzo di pizza al formaggio, la cui temperatura di cottura è inferiore rispetto a quella che raggiunge il latte nei dolci. L’esito è stato positivo, tanto che ill 78% dei casi, è stato possibile aggiungere i formaggi alla dieta alimentare dei bambini. Infine, è stato introdotto il latte crudo, dal gelato al latte magro. Dei 65 bimbi che fin da subito erano risultati in grado di tollerare il latte cotto, il 60% ha potuto cominciare a mangiare latticini crudi.

La pediatra Nowak-Wegrzyn ha spiegato che:

L’esposizione controllata e crescente a prodotti che contengono latte cotto aiuta gli allergici a superare il problema: i nostri dati dimostrano che una buona parte dei bambini allergici al latte in realtà non ha bisogno di evitarlo del tutto, se li si “abitua” a tollerarlo.
