Acrilammide negli alimenti, è tossica?

L’acrilammide è una sostanza chimica scoperta soltanto nel 2002 da alcuni ricercatori svedesi, che si forma naturalmente negli alimenti amidacei durante la cottura ad alte temperature (frittura, cottura al forno e alla griglia oltre i 120°C) a partire da alcuni zuccheri e da un aminoacido non essenziale (asparagina). L’acrilammide, inoltre, viene impiegata anche in ambito industriale.

L’acrilammide è tossica?

Secondo l’Oms, questa sostanza è potenzialmente dannosa per la salute perché connessa all’insorgenza di tumori. I soggetti più a rischio sarebbero i bambini, per via del minor peso corporeo. Fino a qualche anno fa, l’EFSA, l’Autorità europea per la sicurezza alimentare, non ha mai preso una posizione definitiva, né la Commissione UE ha fissato regole per l’industria o una soglia massima. L’EFSA, tuttavia, a partire dal 2007 ha avviato un monitoraggio sui livelli di acrilammide in 22 gruppi di alimenti da forno provenienti da paesi Ue e dalla Norvegia. Proprio recentemente ha indetto anche una consultazione pubblica online per raccogliere commenti sulla propria bozza di parere scientifico sulla presenza di tale sostanza negli alimenti, in vista anche della pubblicazione del parere finale prevista per la prima metà del 2015. Poi spetterà alle autorità nazionali ed europee quali misure adottare.

Quali alimenti contengono acrilammide?

L’acrilammide è contenuta soprattutto nel caffè e nei prodotti fritti a base di patate (incluse patate fritte a bastoncino, crocchette e patate arrosto). Le altri fonti alimentari sono i biscotti, i crackers, i wafer, i salatini, il pane, le fette biscottate e gli alimenti per l’infanzia.

Come ridurre l’acrilammide negli alimenti?

Eliminare completamente l’acrilammide dalla dieta è di fatto impossibile, tuttavia si possono ridurre i livelli preferendo alla frittura e all’arrosto pratiche di cottura più sane. Ad esempio si può bollire, cuocere a vapore o saltare in padella. Se si sceglie di friggere è importante comunque non raggiungere temperature elevate. È chiaro che seguire una dieta equilibrata, con una più ampia varietà di alimenti, ad es. carne, pesce, verdura e frutta, oltre a prodotti amidacei che possono contenere acrilammide, potrebbe aiutare i consumatori a ridurre l’assunzione di questa sostanza.
