La noce è il frutto dell’albero del noce, una pianta originaria dell’Asia ma conosciuta in Europa fin dall’antichità; la noce è composta da un seme, chiamato gheriglio, coperto da una pellicina e contenuto tra due gusci di colore marrone. Esistono diverse varietà di noci, ma in Italia la più diffusa è quella di Sorrento, che possiede un gheriglio poco oleoso, e che quindi è in grado di conservarsi per diverso tempo, e che è tenero e croccante. In gastronomia le noci vengono utilizzate soprattutto per la preparazione di dolci e biscotti, ma sono usate anche nelle insalate, nei formaggi e nei condimenti.
Le noci sono alimenti molto energetici e contengono notevoli quantità di grassi polinsaturi, però sono ricche di antiossidanti che aiutano a contrastare l’invecchiamento della pelle e delle cellule. Ma non solo: le noci sono anche ricche di proteine e possiedono facoltà terapeutiche in quanto contengono un amminoacido, l’argina, che viene trasformato dalle cellule in nitrossido, una sostanza in grado di prevenire l’arteriosclerosi. Le noci sono anche ricche di sali minerali e di vitamine del gruppo B ed E.
Quando comprate le noci fate attenzione alla buccia che deve essere priva di ammaccature, e cercate quelle che hanno ancora attaccato il picciolo con le foglie perché vuol dire che sono state appena raccolte; per quanto riguarda la conservazione, se avete acquistato le noci con ancora il guscio, potete mantenerle per circa 5 mesi all’interno di sacchetti di carta in luoghi asciutti e freschi e lontani dalla luce; se invece avete comprato quelle prive di guscio, dovete conservarle in frigo per al massimo due mesi, chiuse ermeticamente in contenitori di vetro.
Infine un paio di curiosità: il decotto di foglie di noci possiede proprietà digestive, e l’olio di noci, che un tempo veniva usato per l’illuminazione, durante la guerra fu elevato a medicinale e a condimento a causa del prezzo proibitivo di quello d’oliva.
