Se state cercando un dessert light per il pranzo o il cenone di Natale, dovete assolutamente provare la gelatina di menta e lamponi: un dolce leggero e stuzzicante che può essere gustato da solo o come accompagnamento ad un dolce più sostanzioso; questa gelatina, infatti, contiene soltanto 70 calorie a porzione, cioè a bicchiere.

Gelatina di menta e lamponi
Ingredienti
300 grammi di lamponi, 20 grammi di gelatina in fogli, un ciuffo di menta, 100 grammi di zucchero, un albume
Preparazione
Mettete a bagno metà fogli di gelatina in acqua fredda, intanto preparate lo sciroppo di menta, ovvero fate bollire in un pentolino 90 grammi di zucchero con 300 grammi di acqua; appena lo sciroppo si sarà sciolto e lo sciroppo avrà preso bollore, togliete dal fuoco e unite le foglie di menta. Lasciate in infusione per 20 minuti, filtrate attraverso un colino e riscaldate di nuovo, senza però arrivare a bollore.
Strizzate i fogli di gelatina e stemperateli nello sciroppo di menta mescolando con una frusta a mano; trasferite in uno stampo da plumcake e lasciate intiepidire prima di metterlo in frigo a rassodare per almeno 4 ore. Mettete a bagno i rimanenti fogli di gelatina in acqua fredda, riscaldate 50 grammi di acqua e, appena bolle, stemperate la gelatina, così come avevate fatto per la menta; trasferite in uno stampo e mettete in frigo a rassodare. Prendete 20 lamponi e passateli nell’albume, per poi intingerli nello zucchero semolato avanzato per ottenere un effetto brinato; appoggiate su carta da forno e mettete in frigo.
Al momento di servire a tavola, sformate le gelatine e sminuzzatele grossolanamente; mettere al centro di ogni piatto uno strato di gelatina verde, coprite con qualche dado di gelatina di lamponi, i frutti rimasti alternati con quelli brinati. Completate con una foglia di menta e portate in tavola.
