I pistacchi sono il frutto dell’albero omonimo che cresce spontaneo in Medio Oriente. La parte commestibile dei pistacchi è quella verde rivestita da una pellicola rosso-viola e custodita in un guscio doppio di forma ovale.

Al momento dell’acquisto dovete prestare attenzione a scegliere quelli con il guscio integro e dal colore brillante, sintomi dell’avvenuta maturazione della pianta. Dovete stare attenti anche a non comperare quelli con la polpa raggrinzita perché sono troppo vecchi per essere consumati. I pistacchi possono essere conservati per 6 mesi in un luogo fresco e asciutto, al riparo dalla luce e contenuti in sacchetti chiusi ermeticamente, altrimenti rischiano di perdere il loro sapore.

Pistacchi, proprietà

I pistacchi sono molto energetici e quindi indicati nell’alimentazione di sportivi e bambini, mentre sono assolutamente controindicati in presenza di ulcere, malattie del fegato, diabete e obesità.
I pistacchi al naturale sono un alimento povero di sodio e colesterolo e ricco di vitamine e minerali.

A causa del grande contenuto lipidico, l’apporto energetico è talmente alto da superare quello di molti dolciumi, salumi ed insaccati grassi. Una nota positiva però c’è: i lipidi contenuti nei pistacchi appartengono in maggioranza a quella classe di acidi grassi che aiutano a tenere sotto controllo il colesterolo.
