Farine raffinate, carne rossa e latte: i tabù alimentari di nuova generazione

Ci sono tanti tabù sull’alimentazione. Alcune teorie ingannevoli si sono create perché frutto di un’informazione sbagliata e superficiale. Ognuno di noi, quando si parla di cibo e dieta, ha una sua opinione, ovviamente soggettiva e nella maggior parte dei casi senza basi scientifiche. La somma di tutte queste opinioni ha creato numerosi falsi miti, pericolose tendenze e interpretazioni errate.

Le farine raffinate fanno davvero male? Negli ultimi anni si parla sempre di quanto siano preziose per la salute le farine e i cereali integrali, perché molto più ricche di vitamine e soprattutto di fibra. Attenzione però, i prodotti derivati dalle farine raffinate, come il pane, non sono dannosi per la salute. Per esempio, in termini d’indice glicemico, il pane bianco non è così diverso da quello integrale (70 contro 68), mentre ha una percentuale maggiore di carboidrati. Questo semplicemente per dire che potete introdurre nella vostra dieta entrambi gli alimenti, magari riducendo un po’ le porzioni dei prodotti raffinati, ma non escludendoli completamente.

Un alimento molto discusso per esempio è il latte. Molti esperti sono convinti che in età adulta non faccia bene, perché il nostro corpo, raggiunta l’età adulta, ha difficoltà a digerire il lattosio. Andrea Ghiselli, primo ricercatore dell’Istituto Nazionale di Ricerca per gli Alimenti e la Nutrizione, sostiene che le critiche al latte siano solo frutto di fantasie:

Il consumo quotidiano di latte e derivati non solo non favorisce l’osteoporosi ma, anzi, conferisce una grandissima protezione nei suoi confronti, non tanto in età avanzata, quanto nell’infanzia e ancor più nell’adolescenza, fase in cui il consumo di latticini contribuisce al raggiungimento di quel picco di massa ossea che, se conservato con uno stile di vita adeguato, sarà un’ottima eredità per la vecchiaia.

Dito puntato contro la carne rossa, di cui si fa complessivamente largo consumo. La Dieta Mediterranea consiglia di mangiare quest’alimento una volta la settimana e di favorire quella bianca. Purtroppo per correggere una cattiva abitudine non basta dare delle indicazioni. Secondo i dati dell’Inran gli italiani mangiano più carni rosse fresche e lavorate rispetto alle raccomandazioni americane (500 grammi cotte a settimana di massima).  Bisogna considerare che un alimento non va mai valutato da solo, ma all’interno di pasto. Se per esempio la carne è accompagnata da tanta verdura e frutta si possono ridurre gli effetti negativi, grazie agli antiossidanti. E’ ben diverso che consumare una bistecca alla griglia accompagnata da salse e patatine fritte.
