La vitamina K è una vitamina idrosolubile la cui funzione principale, che è anche quella da cui prende il nome scientifico, ossia Koagulation vitamine, è di svolgere un’importante azione emostatica; questa vitamina è importante anche per il suo ausilio nella formazione e nel mantenimento del tessuto osseo.
La vitamina K si trova soprattutto nelle verdure a foglia verde, come lattuga, spinaci e broccoli, nella carne soprattutto in quella di manzo e di maiale e nei latticini, oltre ad essere prodotta per sintesi dalla microflora batterica intestinale.
Da un recente studio condotto dal ricercatori di Nutrizione Umana dell’Universitat Rovira i Virgili di Reus, in Catalogna, e pubblicato sul Journal of Bone and Joint Surgery, un’elevata presenza di vitamina K apporterebbe importanti benefici alle ossa degli anziani, sia uomini che donne, e li aiuterebbe a mantenerle forti e integre.
La novità della ricerca spagnola consiste nel fatto che, per la prima volta, è stata presa in esame la relazione diretta tra una grande quantità di vitamina K nella dieta e le variazioni nella struttura interna dell’osso.
Lo studio è stato condotto su un campione di 200 anziani con un’età media di 67 anni, ai quali è stato dati un questionario sulla dieta che stavano seguendo e su quali alimenti assumessero più frequentemente, monitorandoli, poi, per due anni. Gli scienziati hanno usato diversi strumenti per stimare l’assunzione di vitamina K e varie tecniche diagnostiche, per misurare lo stato di salute delle ossa e la densità ossea, come ad esempio l’ultrasonografia al calcagno.
I ricercatori hanno potuto osservare così, che
ad ogni aumento di 100 microgrammi nei livelli di assunzione di Vitamina K corrispondeva un incremento di 0,008 g/m2 nella densità ossea.
Inoltre, più la dieta era ricca di vitamina K e più le ossa erano elastiche e in salute, e non soffrivano dei fenomeni di microporosità legati all’invecchiamento e di fratture osteoporotiche. La vitamina K è così importante per le ossa perché attiva l’osteocalcina, una proteina che attiva una sintesi che permette al calcio di fissarsi nel tessuto osseo; senza la vitamina K questa proteina non si attiva e le ossa risultano più fragili ed esposte a fratture.
