Ricette light: spiedini di pollo al curry

Gli spiedini di pollo al curry è un piatto molto semplice da realizzare, ma altrettanto gustoso e leggero, fonte di sostanze disintossicanti da consumare come antipasto o come secondo, accompagnato da pane di farro o riso basmati.

La carne di pollo è ricca di proteine nobili, che favoriscono il rinnovamento dei tessuti e la formazione degli enzimi e degli anticorpi. Si tratta, infatti, di proteine che contengono aminoacidi utili nel metabolismo muscolare, e nello smaltimento delle tossine che si accumulano quando ci sottoponiamo ad uno sforzo intenso.

A differenza delle altre carni bianche (tacchino e coniglio), la carne di pollo è più facilmente masticabile e digeribile, oltre che povera di grassi. In particolar modo il petto di pollo, contiene solo l’1% di grassi. Per tutte queste ragioni, la carne di pollo è ideale per chi deve tenere sotto controllo il peso corporeo.

Le verdure utilizzate per realizzare questi spiedini, zucchine e pomodori, sono un’ottima fonte di fibre alimentari, che aiutano a regolarizzare l’intestino, oltre che di potassio, il cui effetto diuretico è oramai più che noto. Il curry, inoltre, come dimostrato in una ricerca condotta recentemente, grazie al curcumino, il pigmento che gli da quella particolare colorazione ocra, protegge i neuroni del cervello dai danni prodotti dallo stress ossidativo.

Ingredienti per la ricetta (2 persone)

300 g di petto di pollo a tocchetti;
2 zucchine sode;
12 pomodorini a ciliegia;
12 funghetti champignon di dimensioni simili;
1 limone;
1 cucchiaio di olio d’oliva extravergine;
2 cucchiaini di curry; sale marino integrale q.b.

Preparazione

Per prima cosa munitevi di alcuni stecchini di legno per spiedini. Mettete i tocchetti di pollo in una ciotola con il succo di limone e una presa di sale e lasciate riposare per 20 minuti.

Spargete il curry in un piatto e passate i tocchetti di pollo marinati nella polvere. Fateli dorare in un tegame antiaderente con l’olio. Portateli a cottura e infine infilzateli in alcuni stecchini di legno alternando pollo, rondelle di zucchine, pomodorini e funghetti. Buon appetito!
