Seitan, ottima fonte alternativa di proteine

Il Seitan è un alimento di origine vegetale che trova largo impiego nella cucina vegetariana e macrobiotica come alternativa alla carne; il seitan si caratterizza infatti per l’elevato contenuto di proteine a fronte di un contenuto davvero modesto di grassi e colesterolo.

Queste ultime caratteristiche, insieme al sapore e all’aspetto gradevoli, lo rendono indicato per qualunque tipo di dieta, non necessariamente vegetariana, finalizzata al mantenimento del peso e alla riduzione dei fattori di rischi per l’insorgenza di patologie cardiovascolari; tuttavia, occorre precisare come non si tratti di un alimento completo dal punto di vista nutrizionale, perchè carente di alcuni amminoacidi essenziali.

Inoltre, il seitan viene ottenuto principalmente dalla lavorazione del glutine di grano tenero e il suo consumo è quindi sconsigliato alle persone affette da celiachia; più precisamente per preparare il seitan si separano le due componenti fondamentali della farina di grano tenero: l’amido e il glutine, quest’ultimo, che rappresenta la parte proteica del grano, viene successivamente bollito in acqua insieme a salsa di soia, sale marino, le alghe e altri aromi.

Come è facile immaginare, il seitan è un alimento proveniente dalla tradizione culinaria orientale e veniva indicato in Giappone con il nome di kofu. Attualmente, grazie al dilagare degli stili alimentari vegetariano e macrobiotico, è piuttosto diffuso anche nei paesi occidentali; in Italia si trova con maggiore facilità nei negozi specializzati in alimentazione biologica e cibi etnici.

Quanto alle calorie e valori nutrizionali del seitan, questo alimento apporta in media 168 Kcal per 100 grammi di prodotto, come già detto è ricco di proteine (ma queste non hanno elevato valore biologico motivo per cui è opportuno consumare il seitan in associazione con altri alimenti che possiedono questa caratteristica come il legumi) e povero di carboidrati e grassi. Del tutto mancante di colesterolo, apporta discrete quantità di sodio e potassio.
