Archiviate le feste natalizie, ora dobbiamo pensare a perdere quei due o tre chili messi su a causa di pranzi e cenoni troppo abbondanti; come abbiamo spiegato più volte, per farlo non è necessario sottoporsi ad un regime dietetico troppo stretto e soprattutto “triste” e senza gusto, perché il risultato sarebbe quello di abbandonarlo dopo poco tempo e di ricominciare a mangiare di più e peggio di prima.
Per fortuna, infatti, esistono tante ricette light, che pur avendo poche calorie, sono gustose e saporite, come quella che vi illustreremo oggi, ovvero la ricetta delle minitorte di formaggio caprino, degli sformatini veramente deliziosi che contengono solo 75 calorie per porzione.
Minitorte di formaggio caprino
Ingredienti
250 g. di ricotta, 100 g. di formaggio caprino, 5 cl. di panna fresca light, 200 g. di rucola, 40 g. di parmigiano, 2 uova, 5 foglie di basilico, 10 g. di pinoli, burro per ungere gli stampi, sale e pepe.
Preparazione
Pulite e lavate la rucola, sgusciate in un piatto fondo le due uova e battetele con una forchetta, e poi grattugiate il parmigiano; intanto preriscaldate il forno a 160°. In un mixer frullate la ricotta con la rucola, aggiungete la panna light e insaporite con il parmigiano grattugiato, i pinoli e le foglie di basilico; quando avrete ottenuto un composto morbido e omogeneo aggiungete anche le uova.
Ungete con il burro gli stampini rotondi come quelli per le crostatine e riempiteli con la crema di ricotta, infornate e cuocete per 25 minuti nella parte bassa del forno; tre minuti prima di ultimare la cottura mettete su ogni tortina un cucchiaio di formaggio caprino. Lasciate intiepidire le minitorte prima di servirle a tavola.
