Ingredienti per 4 persone

filetto di maiale di circa 400 gr;
30 gr di prosciutto cotto affumicato in una sola fetta;
3 mele rosse;
2 dl di brodo vegetale;
6 bacche di ginepro;
2 foglie di alloro;
un cucchiaio di olio extravergine di oliva;
sale q.b.

Preparazione semplice e veloce

Fate dei piccoli tagli sul filetto, inserite al suo interno delle striscioline di prosciutto e sfregate il filetto con una piccola quantità di sale. Dopo questa operazione adagiate il filetto su una teglia e unitelo alle foglie di alloro sminuzzate e alle bacche di ginepro. Preparate del brodo vegetale e una volta pronto versatelo sulla teglia. Tagliate le mele a dadini, avendo cura di eliminare il torsolo, e unitele al preparato.

Tutto il composto va infornato a 200° per circa 30 minuti (curatevi di scaldare prima il forno e inserite la teglia a temperatura raggiunta). Il passo successivo prevede l’avvolgimento del filetto in carta d’alluminio per mantenerlo caldo. Il composto ottenuto dalla cottura del filetto (alloro, mele cotte e fondo di cottura) andrà frullato fino ad ottenere una vellutata crema. A questo punto potete affettare la carne e servirla insieme alla crema.

Decorazione del piatto

Per decorare il piatto potete mettere una mela svuotata con qualche foglia di lattuga finemente tritata o adagiare sui bordi delle fettine di mela. Sarebbe molto carino se venissero messe delle fette di mela al centro, quasi a formare un fiore con la crema all’interno. Tre fette di filetto in un lato del piatto adagiate su un letto di verdura spezzettata. In bocca al lupo per il vostro pranzo di Natale!
