Budino all’arancia

Ingredienti (per 6 budini)

  • 750 ml di spremuta di arancia filtrata

  • 50 gr di amido di mais

Abbassate il fuoco e continuate a mescolare finché non si addensa, dunque spegnete il fuoco. Bagnate con il rum 6 stampi da budino, versatevi il composto e lasciate freddare a temperatura ambiente. Quando saranno freddi metteteli in frigo per almeno 5 ore. Rovesciate gli stampi sui piatti da portata, spolverate con cannella e scaglie di cioccolato, guarnite con una fetta d’arancia e servite. Potete evitare di usare l’agar agar se servite il dolce direttamente in coppette, senza sformarlo.

Biscotti al cocco


  • 200 gr di farina tipo 00
  • 80 gr di olio extravergine di oliva
  • 70 gr di zucchero di canna
  • 3 bicchieri di latte di soia
  • 250 gr di farina di cocco
  • Vaniglia
  • Un pizzico di sale
  • 1 cucchiaino di cremor tartaro

In una ciotola unite olio, vaniglia, zucchero e sale. Aggiungete la farina, il latte di soia, la farina di cocco e il cremor tartaro. Preriscaldate il forno a 180 gradi e rivestite una teglia o una placca con carta da forno. Usando due cucchiai o le mani formate dei biscotti e sistemateli sulla teglia. Infornate per 20-25 minuti.

Plumcake cioccolato e frutti di bosco


  • 300 gr di farina
  • 200 gr di zucchero a velo
  • 130 gr di olio di semi
  • 200 gr di latte di soia
  • 30 gr di cacao amaro
  • 3 cucchiai di aceto di mele
  • 1 bustina di lievito per dolci
  • Frutti di bosco

In una ciotola mescolate latte di soia e aceto di mele. Lasciate riposare per 10 minuti, deve cagliare. A parte lavorate olio e zucchero a velo, dunque aggiungete il latte cagliato, il lievito, la farina setacciata, il cacao e i frutti di bosco. Versate il composto nell’apposito stampo da plumcake e infornate a 170 gradi per 30-35 minuti.
