Pensate che marmellate e confetture siano la stessa cosa? Sbagliato! I regolamenti comunitari distinguono tra le une e le altre. In particolare, il termine “marmellata” indica il prodotto a base di soli agrumi e corrisponde a quella che gli inglesi chiamano marmalade, mentre le conserve confezionate con altri tipi di frutta si definiscono “confetture” o “gelatine”, jam per gli inglesi, secondo la lavorazione o la percentuale di frutta utilizzata.

La confettura extra è la migliore, ed è quella preparata con circa il 45% di polpa di frutta; nella confettura, invece, la quantità di polpa non può essere inferiore al 35%. La gelatina deve contenere almeno il 35% di succo di frutta, e la marmellata può essere, a sua volta, prodotta con polpa, purea, succo, estratti acquosi e scorza di agrumi in misura non inferiore al 20%.

Qualsiasi prodotto decidiate di comprare, leggete bene l’etichetta per verificare il quantitativo di frutta effettivamente impiegato, il contenuto di zucchero e l’eventuale presenza di coloranti e conservanti. All’aspetto, una buona confettura o marmellata deve mostrare un colore brillante e uniforme in tutta la confezione; la presenza di corpi estranei è un sicuro difetto, anche se si tratta di residui della frutta di partenza. Una valutazione importante è quella della consistenza: una buona confettura non deve essere né troppo compatta né troppo fluida.

Marmellate e confetture non sono certo alimenti ipocalorici, ma essendo prive di grassi non raggiungono nemmeno quei valori stratosferici che si potrebbero immaginare; un etto di marmellata fornisce in media 230-250 calorie, ma considerate che, mangiando a colazione non più di due cucchiai di questi prodotti, pari a circa 40 g., le calorie possono arrivare al massimo a 100.

Si tratta, tra l’altro, di un’energia immediatamente utilizzabile, perché dovuta quasi esclusivamente agli zuccheri semplici, cioè quelli già presenti nella frutta o aggiunti durante la produzione. Sfruttate, quindi, marmellate e confetture per ricaricarvi al mattino, ma se avete problemi di linea, non superate i due cucchiai al giorno.
