Il pepe del Sichuan: una spezia e un medicamento

Perché ne parliamo? Certo, per la passione di molti di noi per una delle gastronomie più famose e apprezzate al mondo. Ma anche perché, questo 24 agosto, tre amatissimi influencer italiani – Laura Comolli, Roberto De Rosa e Nicolò Leone – saranno in partenza per due luoghi leggendari: Chengdu, patria del Panda gigante e del piccante, e Lhasa, cuore spirituale del Tibet e regno degli yak. Un viaggio reso possibile dall’Associazione ‘Mirabile Tibet’ e dall’Agenzia di comunicazione I SAY, in questa prima estate di riapertura al turismo internazionale dopo ben tre anni di fermo.

Le inaspettate proprietà di questa spezia

Assieme all’anice stellato, al finocchio, ai chiodi di garofano e alla cannella, il pepe Sichuan è una delle cinque principali spezie cinesi. Che si ottiene dalla buccia, mentre il vero seme viene rimosso per via del suo sapore poco gradevole. Potente dal punto di vista nutrizionale, contiene elevati livelli di vitamina A ma anche potassio, ferro, manganese, zinco, rame e fosforo. Di aroma quasi agrumato, più fresco di quello del pepe nero, i suoi impieghi sono dunque molteplici – come i benefici alla nostra salute, già conosciuti dalla medicina cinese tradizionale:

  • il miglioramento della digestione, compresa la capacità di alleviare i dolori e i problemi intestinali;
  • il miglioramento della circolazione, grazie a un composto (cumarina) in grado di fluidificare il sangue e al ferro contenuto, proficuo contro l’anemia;
  • il miglioramento della vista, dato dal beta-carotene, dagli antiossidanti e dalle vitamine presenti;
  • l’azione antinfiammatoria, per via degli antiossidanti e dei fitosteroli;
  • l’effetto blandamente anestetico e antidolorifico, utilissimo pertanto in caso di mal di denti;
  • il rafforzamento del sistema immunitario, per via dello zinco.

La sua caratteristica più sorprendente? Quel leggero intorpidimento della bocca che, paradossalmente, attenua gli effetti di altre spezie come il peperoncino permettendo di gustarle meglio e di percepire maggiormente i sapori “nascosti”. Le uniche due raccomandazioni? Consumarlo in bassissima quantità ed evitarlo in gravidanza e allattamento.

Il pepe Sichuan non diventerà mai una “dieta” vera e propria, ma – se aggiunto ai nostri piatti di carne e verdure – saprà, come abbiamo visto, contribuire alla nostra salute. 

Quali i suoi usi nella cucina Sichuan?

Himalaya

Il piatto più amato, il Sichuan Hot Pot (“pentola calda”), risulterà curioso ai nostri tre viaggiatori ma sarà una delle esperienze più “condivisibili”. Letteralmente, a tavola e sui social media. Perché parliamo di un’enorme pentola ripiena di acqua, verdure, spezie e beninteso pepe di Sichuan, posizionata su una piastra tra i commensali e portata a ebollizione, nella quale ognuno può mettere a cuocere ciò che desidera: carne, pesce, verdure e addirittura il pane. Il risultato finale sarà comunque ottimo e, la convivialità, assoluta.

Per il Pollo Kung Pao invece – piatto principalmente di pollo e noccioline, arricchite da un po’ di verdure e ovviamente peperoncino o pepe di Sichuan – basterà, anche sostituendo alcuni ingredienti, seguire la ricetta raccontata dai nostri colleghi di Ginger & Tomato. Ne avremo un piatto ricco di colori, profumi e sapori, bilanciato dalla presenza del riso in bianco, che aggiungerà a tutta questa ricchezza l’ingrediente migliore di ogni dieta: la gioia.
